A soft and deliciously spicy filling that can be used in buns or sandwiches.
- 1/4 kg boneless chicken - chopped into cubes then boiled with some water and a bit of salt, black pepper and a little bit of ginger/garlic paste until tender then shredded
- 1 big or 2 medium potatoes - peeled, chopped and boiled in some water with a bit of salt until soft, then drained.
- 1 onion, chopped very finely
- 1 green chilli, chopped
- 1/2 tsp. cumin powder
- 2 tbsp. coriander, chopped
- 1 tsp. lemon juice
- 2 tbsp butter
Heat butter in a pan then add the chopped onion and stir-fry until soft and translucent. Add the shredded chicken and the potatoes, sprinkle a bit of salt and pepper, cumin powder, chopped chilli and coriander and the lemon.
Mix together for a few minutes and switch off. Use as required. 🙂
