A very British dessert, combining bananas with toffee and layering with digestive biscuits and whipped cream. YUM!
Ingredients
- 10-15 digestive biscuits crushed in a processor
- 2 tbsp. butter
- 1 tin sweetened condensed milk made into dulce de leche (see below for instructions)
- 4-5 bananas
- 1 cup whipping cream, whipped
- crushed cadbury flakes or grated chocolate
Instructions
For the Dulce de Leche –
Make it into toffee using this method. Remove label from tin then without opening the can just put it in pressure cooker with about one and half liters of water. Close the pressure cooker and boil for 40-50 mins. Then let the pressure cooker cool down COMPLETELY before opening, and then let the sweet milk tin cool as well completely before opening it. IF YOU OPEN IT WHEN IT’S HOT IT CAN SPLASH OUT HOT TOFFEE! Be careful.
First, heat the butter in a pan and add the crushed digestives. Stir together. Switch off, then pour the biscuit crumbs into a dish and pat down flat.
Cover with cling film and refrigerate for a couple of hours to solidify the base slightly. Then open the sweet milk tin which will now be thick yummy toffee, spread this on the biscuit layer. Then slice bananas and lay them all over the toffee. Finally pour the whipped cream and sprinkle the chocolate.
Refrigerate until chilled and serve!
You might not need to use the full can of toffee made from the condensed milk, depending on your sweet tooth. But the remaining stores very well in the fridge and works beautifully drizzled over other desserts like cake or ice-cream. 🙂
If you don’t have a pressure cooker, follow this method. Pierce 2 holes on opposite sides of the top of your can and remove the label. Then put the can into a pan and add water. The water should reach three-quarters of the can. Bring to the boil and keep boiling for 3 hours for a soft toffee or 4 hours for a thick toffee. Keep checking the water content/level in your pan, and add whenever it starts reducing.

If you follow the instructions VERY ACCURATELY then it is perfectly safe.

Are you using a pressure cooker or an open pan? In a pressure cooker, yes 45minutes. Do not pierce the can in any way if using the pressure cooker, and be careful NOT to open the cooker until it has cooled, and then after removing the can DO NOT open it until it cools too. Go over the steps one more time carefully before starting so as not to injure yourself in any way. All the best! 🙂
I have made banoffee twice now making the toffee in a pressure cooker. However, both times the toffee was too thick, almost like a thick jellylike consistency, hence was not easy to spread. What do you do if the toffee is too thick and not of pouring consistency? A YUMMY dessert, though! 🙂
Dilute it by mixing with some warm milk and mix until it is of a thinner consistency. Next time boil it in the pressure cooker for less time.
The side with the two holes must be in the water,rite?
NO dear, please re-read the instructions. The holes should NOT be in the water, you need to keep that side ABOVE the water or else obviously water will go inside the can and we don’t want that to happen.
i dont have a pressure cooker.. can i make toffee some other way?

if we pour one and a half liters of water in the pressure cooker then the condensed milk tin will be covered with water, is that right? can i use milkmaid as condensed milk?
Yes it is fine if the milk tin is covered with water in the pressure cooker (because using this method we are not piercing any holes in the can). Check and make sure the milkmaid you want to use has sweetened condensed milk on it. If so then yes you can use that.

W/Salaam, normally whipping cream has that indicated on the carton/pack so it would be easy to tell. It is not the same as nestle cream. Try checking at the supermarket, refrigeration isle. Normally whipping cream has over 35% fat percentage.
we shud boil the condense milk on low or high flame?
Medium heat is good.

Hi, you can try cooking some of it in the microwave in a small bowl. Keep checking on it and stirring after every 10-20 seconds until it thickens and begins to change colour to a toffee-brown colour.

As I am allergic to bananas, is there a substitute for it?? or can I just omit the bananas?
You can use any other soft fruit that you like. Someone tried it with pineapple and liked the result.
can amul fresh cream be whipped for this dessert?
Sorry but I have no experience with Amul fresh cream. Try whipping a small amount and see how it turns out.

Yes you can but it will no longer be banoffee pie. It will be custard pie.

It will serve 8-10 or more depending on size of servings. A 9×11 pan is fine.
