Kac Kac/Somali Cookies

Servings : 3 dozen

The famous Somali cookies, Ka'Ka…actually written as Kac Kac in Somali because they pronounce the letter 'c' as the arabic letter 'ain'. Really tasty crispy lil tidbits…most enjoyable with tea/coffee.

Ingredients

  • 1 cup flour, sifted
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder
  • 1/8 cup butter, melted (2 tbsp.)
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 tsp. warm milk
  • oil for frying

Instructions

In a bowl, gently blend the sifted flour, salt, and baking powder.

In a separate bowl, mix the butter, sugar, and egg. Add the milk to the butter/sugar mixture and mix.

Add mixture to the flour and knead until smooth dough is formed. Cover with a damp towel and let rest in a warm spot for 30 minutes.

Roll out to ¼ inch thick piece.

Cut into shapes. Some people cut it into diamond shapes or squares. Deep fry until golden brown. Drain on paper towels.

Enjoy!
