Grilled Chicken Liver

Servings : Serves 3-4

One of the most delicious ways of preparing grilled/barbequed chicken liver

  • 500 gm chicken liver, cleaned then kept on a sieve to drain any excess water
  • 1/2 tsp. salt
  • 1 tsp. black pepper powder
  • 1/2 tsp. garlic paste
  • 1/2 tsp. ginger paste
  • 1/2 tsp. red chilli powder
  • 1 tbsp. ground cumin powder
  • 1/2 tsp. tandoori masala
  • juice of half a lemon

Marinate chicken livers for 2 hours with all the ingredients.

Skewer the chicken liver and grill or fry them on all sides on a thick grill-pan with a couple tbsp. of oil until done and aromatic.

Once done, light a coal and place it in the middle of all the skewers, then drop some oil on it and cover the dish for a minute so that the smoke that is released can be enveloped in the grilled liver. Uncover and discard the coal.

Squeeze a bit of lemon juice over the grilled liver, sprinkle a dash of black pepper powder and serve with sliced onions and tomatoes, some raita or any dip of your choice and naans or parathas.

Enjoy! 🙂
