Loaded Hot Dogs

This is the kind of home made fast food that would please just about anyone!  I normally use my fabulous tandoori grilled sausages in these loaded hot dogs, but you could use fried or steamed sausages, or even home made fried kababs or seekhs for those are averse to sausage meat.  The spicy flavourful topping that is loaded over these buns makes them truly spectacular.

Ingredients for Sausages

  • 8 sausages 500 gm (I use the regular 3 inch ones)
  • 1/4 cup yoghurt
  • 2 tsp tandoori powder
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp tomato paste
  • 1 tsp red chilli powder
  • 1/8 tsp turmeric powder
  • pinch of red or orange food colouring (optional)
  • juice of 1 lime
  • 1/4 tsp salt or to taste (some sausages are normally already salted, so add with caution)
  • 2 tbsp oil

Ingredients for Topping

  • 1 cup sliced bell pepper
  • 1 cup sliced onions
  • 2 tbsp oil
  • 1/4 tsp garlic
  • 1-2 chopped red chillies (optional)
  • 1 tbsp soy sauce
  • 1/4 tsp black pepper
  • splash of vinegar

Other Ingredients

  • 4 long buns
  • ketchup
  • mustard
  • mayonnaise
  • fries

Instructions

Make very shallow slits on the sausages, about 2 or 3 per side.  Mix all the above ingredients and marinate them overnight or for at least an hour.

Grill over a hot BBQ or in 180C preheated oven until plumped up and cooked through.

Next, prepare the topping.

Heat the oil in a pan, add sliced pepper and onions and stir fry for a few minutes until the onions just begin to caramelise. Then add the garlic and stir it in. Drizzle in the soy sauce and a small splash of vinegar. I also like to chop up one red chilli and throw it in there for that added spicy kick. Keep stirring until they soften and caramelise to a nice brown. Add a touch of black pepper if you like and taste for salt, usually soy sauce and vinegar are enough for seasoning, but if you find it needs a bit more by all means add to your taste.

To assemble, slit each long bun and lightly toast them. Then spread a bit of mayonnaise and ketchup on the insides. Add 2 small sausages per bun and top off with the bell pepper and onion topping. Drizzle some ketchup or mustard over the top.  Serve warm with fries and drink of your choice.
