Grilled Cheese Sandwich

Servings : Makes 2 sandwiches

A grilled cheese has got to be one of the easiest and most satisfying sandwiches. The beauty of this sandwich is that it can either be made completely plain with just the cheese filling, or pimped up with the addition of various other ingredients to make it truly extraordinary. I enjoy this sandwich with a warm bowl of home made tomato soup.

Ingredients

  • 4 slices of good quality bread of your choice
  • butter or mayonnaise
  • 1/2 cup grated cheddar cheese
  • 1/4 cup grated mozzarella cheese
  • tomato sauce/ketchup (or pizza sauce if you have some)
  • 1 onion, sliced and sautéed until slightly caramelised (optional)
  • 1 chopped chilli (optional)
  • salt and pepper to taste

Instructions

Mix the grated cheese together and season with salt and pepper. You could use sliced cheese or just one kind of cheese, but for me this combination works best and I prefer grated because it melts more evenly.

Apply a thin layer of butter or mayonnaise on what would be the outer sides of each sandwich. Take one of the slices, buttered side down.  Add a bit of pizza sauce or ketchup, then top up with half the grated cheese and some caramelised onion slices.  At this point you can add some chopped chilli, shredded chicken, whatever you like really. Cover with the second slice, buttered side up. Heat a pan and then place your assembled sandwich. Turn the heat down to very low to give the sandwich enough time to heat through so the cheese in the middle gets nice and melty. If the heat is too high, the bread will darken quickly before the cheese has had enough time to melt, so have patience and let it do its work slowly.

Once the bottom side is golden, press the sandwich down slightly just to ensure the cheese is holding everything together, then flip it carefully to brown the other side. If you have a hard time flipping, just turn a plate over your pan and flip the sandwich onto the plate then slide it back into the pan.

When both sides are golden brown and crispy and the middle is all ooey gooey and melty, remove the sandwich from the pan and let it rest for a couple of minutes.  Repeat with your second sandwich.

Slice each sandwich on the diagonal and serve! They taste insanely good on their own, but a bowl of tomato soup just makes them even better.
