Egg Salad Sandwich

Servings : Makes 2 Sandwiches

A simple egg salad sandwich could be one of the easiest and most delicious sandwiches if made correctly. Perfect for a light lunch or brunch.


  • 3 eggs, boiled
  • 2 tbsp. mayonnaise
  • 1 tsp. lemon juice
  • 1 tbsp. finely chopped green onoin
  • 1 finely chopped green or red chilli (optional for those who want some extra spice)
  • lettuce leaves
  • 4 slices of bread (I used whole wheat)
  • salt and pepper to taste


Peel the hard boiled eggs and chop them up very finely or mash them a bit using a fork.  Put them in a bowl, add the mayonnaise, salt, pepper, lemon juice, onion and chilli.  Mix well and taste.  Adjust if needed.

Toast the bread slics, put a lettuce leaf over one of the slices then top with half the egg mixture.  Cover with another slice of bread.  Repeat with the remaining two slices.  Serve!
