Servings : Makes 10 pancakes
Here is my favourite recipe for yummy, lighter than air, fluffy pancakes that I have been using for close to 10 years. I had experimented with SO MANY pancake recipes before this one, but NONE comes close!
Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 tsp. salt
- 2 tsp. baking powder
- 2 tbsp. sugar
- 2 large eggs
- 1 1/4 cups milk
- 1 tsp. vanilla essence
- 3 tbsp. melted butter or veg oil
- greased measuring cup (I used the quarter measuring cup)
- griddle or non-stick pan
- 3 large bowls
- whisk/hand-mixer/cake mixer
Instructions
Sieve and mix dry ingredients with a whisk or toss them with a fork in bowl 1. (Flour, sugar, baking powder, salt)
Separate the egg yolks and set them aside in bowl 2 (this bowl should be the largest).
Whip the egg whites in bowl 3 until fluffy and peaks form, then set aside.
Add milk and vanilla essence to the yolks and beat together until they bubble. Mix in the oil/butter then add in all the dry ingredients and whisk together carefully until they’re incorporated. Don’t be tempted to over mix, a few lumps are fine. Too smooth a batter will give u flat rubbery pancakes instead of the soft/airy fluffy ones we’re going for.
Fold in the egg whites in 2 additions. (Meaning first add half the eggwhites and gently fold them in then add the other half of the eggwhites and fold them in too)
Let the batter rest for 15-20mins.
Heat pan or griddle to max, lightly coat the surface with oil.
Then using your greased scooping cup, scoop and directly pour the mixture on the pan. Don’t try to round the pancake by pouring in a circular way, just dump the mixture and it will will round itself out.
When bubbles start forming on the top side of the pancake, gently ease the spatula under the pancake and turn it. Don’t pat down or press down the pancake, it will ruin the texture inside. You can peek to check if the under side is done and remove once ready.
Keep adjusting the heat, if it goes too high you can keep reducing and increasing as is necessary.
Always try making half the measurement of the recipe in your first attempt, increasing as you get more adept. Good luck!!!

Around 12 pancakes, depending on size.

W/Salaam, it means fold HALF the egg whites first, then add the other half of the egg whites and fold. Not all the egg whites in one go.

I dont know the correct measurement of the cup used in the recipe since i dont have any measurment apparatus with me. I tried by using the measurment you gave, like 8 tbsp=1 cup. Am i Right?
Yes that should be fine, although I would advise you to get either measuring cups or a scale for more accurate measurements. Spoon sizes vary and you may end up with different results than what is expected.
I used rice flour instead of the uual maida.Would that be a problem?
Have never tried with rice flour, let me know how it turns out!

when we add mil and Vanilla essence in the yolk, are we supposed to beat it with an electric beater or by spoon?
Use an electric beater for that.

I just wanted to ask one question, iv tried pancakes manier times but mine never turn out to be this fluffy and thick what am I doing wrong? Do we need smaller pan for this? And if we do need small pan than how does it cook through? I make thin ones and they take ages to cook just wondering how long will this thick of a pancake will take?

Hi and thanks! It shouldn’t take that long to cook a pancake. I think you must be over-mixing the batter after adding the egg whites, which makes them deflate and become thin. When the egg whites are mixed GENTLY, the batter becomes light and fluffy so the pancakes become very airy and cook really fast too. Do try again and please follow the recipe as closely as you can especially during the mixing of egg whites for best results.

do we need to mix dry ingredients with water or without water?
My dear there is milk used in the recipe, please follow exactly and don’t use any ingredient not mentioned in the recipe.
will it make a lot of difference in taste if i dont add vanilla essence?
The vanilla adds a good flavour but you can leave it out if you want or add flavouring of your choice.

wanted to know whether i could prepare this batter beforelong, lets say at night to be used the next morning for breakfast( as i think i wont have enough time to prepare/ let it rest for the time you said…etc) i doubt whether they will come out as you described if i do so, so plz help

W/Salaam, thank you. I would not recommend making this batter ahead of time because the egg whites will surely deflate and you will not achieve the fluffy texture that these pancakes have.

Simply measure out HALF of everything listed.
Can we use only forks to mix the ingredients?
You can but a whisk will do a better job.
