Breakfast Burritos

Servings : Makes 6 Burritos

A burrito is a type of Mexican-American dish consisting of a tortilla used as a wrap to completely enclose a filling of one’s choice. These delicious breakfast burritos recipe contains some ingredients you would normally have for breakfast, only they are wrapped up in a neat little package. They work beautiful for those who want to have their breakfast on the go or for packed meals.


  • 6 large tortilla wraps (recipe link in instructions below)
  • 1 can of baked beans
  • 3 sausages, fried and chopped up into bite sized cubes
  • 1 cup breakfast potatoes (recipe link in instructions below)
  • 2 eggs
  • some grated cheddar cheese


The various components of this dish can be prepared ahead and the burrito can then be quickly put together within minutes.

First prepare the tortillas. Since we need the tortillas slightly larger than usual size, use this recipe to make SIX instead of EIGHT tortillas. Link HERE

Prepare the breakfast potatoes using THIS recipe. Cook and dice up the sausages. Beat the eggs and cook them scrambled with a pinch of salt and pepper like THIS.

Warm up the beans and add the potatoes, sausage cubes and scrambled fried eggs. Taste and adjust seasoning if needed.

To assemble, warm up the tortillas, then place your warmed up filling in the middle. Top with grated cheese. Fold the sides of the tortilla in, wrap and roll tightly to enclose the filling neatly. Pack them in wrap or foil to keep them warm and retain their shape until ready to eat.
