Servings : Makes 7 rolls
Crumbly, sweet (but not overwhelmingly so) and super delicious pastries that work so beautifully for breakfast and would be heavenly for dessert with a scoop of ice-cream! Heck these yummies would be perfect any old time of the day. Great as a snack, perfect for picnics, or when you have one of those midnight cravings! 😉
The best thing about them is, they are soooo easy to make that you can prepare them with your kids!
Ingredients for filling
- 1 sweet apple, peeled and cored then grated
- 1 heaped tsp. demerara sugar (light brown sugar)
- 1 pinch cinnamon powder
Ingredients for dough
- 1 cup self rising flour (OR 1 cup all-purpose flour plus 1 tsp. baking powder)
- 2 tbsp. butter, COLD (30 gm)
- 1 tbsp. castor sugar (you can grind normal sugar instead)
- 4 tbsp. single cream (or 2 tbsp. evaporated milk and 2 tbsp. sour cream)
- pinch of salt
- ice cold water
Instructions
Mix the ingredients for the filling and set aside. You can find step by step directions HERE.
Sieve the flour, add the salt and butter, and then rub together using your fingertips until crumbly. Add the castor sugar and mix together using a fork. Then add the cream or evaporated milk and sour cream a little at a time and mix to combine. If need be, add icy cold water until the dough comes together smoothly. Do not over-knead,
Roll out the dough to a rectangular shape, then spread out your filling. Make sure you do not add any of the liquids that gets released from the grated apple.
Start rolling from the long side, like a swiss roll.
Slice your roll into 7 pieces of equal size. You can use a string or dental floss to cut neatly. Place the rolls on a buttered pan with space between them.
Sprinkle with a little more demerara/brown sugar.
Bake immediately at 200 C for 20-25 minutes.
Serve and enjoy!

Sour cream is different from cooking cream (it has a bit of a sour taste like yoghurt but very creamy). But yes you can use cooking cream.
i meant a spicy filling..
Have not tried this recipe with a spicy filling, sorry.
