Servings : 10-12 small rolls
Pav means ‘a small loaf of bread’.
These simple buns/rolls (pav) are the perfect accompaniment for Pav Bhaji (buns and veggies), Vavda Pav (potato buns) or any other meal that requires rolls/buns. They can also be shaped individually and used as burger buns. They are soft and buttery, utterly delicious.
Ingredients
- 3 1/2 cups all-purpose flour
- 1 cup warm milk
- 2 tbsp. milk powder
- 1/2 cup warm water (might use less)
- 1 egg
- 1 tbsp. sugar
- 4 tbsp. oil
- 4 tbsp. melted butter
- 1 1/2 tsp. instant yeast
- 1/2 tsp. salt
- 1 egg for egg wash before baking
Instructions
Sieve the flour, then add milk powder, sugar, yeast and salt. Then add the oil and butter and the egg, and mix together. Now add all the warmed milk. Start kneading together and gradually add the warm water a little at a time. You might not need it all, so add it sparingly until your dough is nice and soft. Knead for a good 8-10 minutes. The more you knead it the softer the buns will be.
Touch a bit of oil with your fingertips and apply all over the ball of dough. Cover in a bowl and set aside for 40mins to an hour for it to double in size.
Punch it down, and break off bits of dough and shape each of them into a ball. You should get about 10-12 small rolls.
Grease your pan/pans with butter and dust with some flour. Place the rolls in it and try to get them close to each other so that there are no or very little spaces in between.
Cover the pans and set aside for a second rise, about half an hour to rise.
Now apply egg wash on the buns, preheat your oven to 180 C and bake for about 20-25 minutes, or until the bread is nice and golden on top.
The egg wash I prefer to use for a lovely glossy finish is made this way. Take 1 egg, beat it with 1 tsp. of milk. Brush on the bread/rolls/buns and bake as directed! 🙂
Brush them with some butter when they are out of the oven, and keep them covered under a towel to maintain softness. Enjoy! 🙂

You can use fresh milk or omit it.

It depends on the size of the buns, 10 minutes is fine for most ovens if the buns are smaller. Thanks for the lovely feedback. 🙂

Hi, is your yeast INSTANT or another version, please check? What you can do is dissolve the yeast in warm water first before adding it to the other ingredients. Make sure the water is WARM not hot.

Yes you can.

W/Salaam, yes you can although results will be better if you mix maida with wheat flour (half and half)

I made these rolls today they came out nice but there was egg smell coming from the buns 🙁 so please tell me where i am going wrong??

W/Salaam, strange that there was an egg smell. Was the egg fresh? Did you knead the dough properly to make sure the egg was well combined? Could be the egg wash that caused the smell? In any case you can leave out the egg and use 2 tbsp yoghurt.

W/Salaam, thanks! I have not tried making these with SR flour simply because that flour contains a lot of baking powder which is not needed for this recipe. I use the same buns for burger buns and they turn out great. 🙂

Actually for some funny reason the comments got shuffled. You can make burger buns out of any flour. That response was to someone who asked if they can make the burger buns out of wheat flour and I advised them to mix wheat with maida for best results. But it would be better with just maida. 🙂
