Chicken Paratha Roll

Servings : Makes 8 rolls

This is one of those meals of which most of the components can be prepared in advance and then put together quickly to serve as and when needed.  It is always a hit with people of all ages, and perfect for those lazy afternoons when you cannot be bothered to cook something from scratch but want a warm and filling snack to comfort you.  I always have a batch of parathas and a few tins of cooked chicken in my freezer specifically for such instances.

Ingredients

  • 8 parathas (recipe link below)
  • 500 gm cooked chicken (recipe link below)
  • 2-3 cups chopped salad (recipe link below)
  • 1/2 cup mayonnaise mixed with ketchup or chilli sauce

Instructions

8 parathas (you can buy these ready made OR use this recipe to make a batch and freeze them until needed:  Parathas Recipe

Any cooked chicken, either leftover or made from scratch. I like to use this Tawa Chicken for my filling:  Tawa Chicken Recipe

Some chopped salad (use any of these recipes):  Cabbage Salad or Mixed Kachumbar Salad

A mixture of ketchup or chilli sauce and mayonnaise.

Warm up the parathas. Spread some of the ketchup/mayo mixture in the middle.  Add some chopped salad followed by the pieces of chicken. Drizzle some more sauce, sprinkle some chilli powder or squeeze some lemon juice if you want the rolls spicy and then roll the paratha up. You can wrap each one up in a foil to keep everything held together neatly.
