One of my personal favourite recipes and a definite keeper of a recipe!

Ingredients for Dough
- 4 cups plain/all purpose flour
- 1 tbsp. instant yeast
- 2 tbsp. powdered milk (optional)
- 1 tsp. salt
- 4 tbsp. oil
- 1 egg (plus one for glazing)
- 1 tsp. castor sugar
- 1/4 tsp baking powder (to reduce any yeasty smell)
Ingredients for Chicken Filling
- 1 1/2 - 2 cups chicken boiled and shredded (250-300 gm when uncooked)
- 2 small onions (finely chopped)
- 1 tsp. salt
- 1 tsp. black pepper
- 2 tbsp. coriander leaves
- 4 green chilies (chopped)
- 1 tsp. garam masala powder
- 2 tbsp. flour
- 2 tbsp. butter
- 1 cup milk
- sesame seeds as required
Instructions
For the Chicken Filling:
Heat 2 tbsp. butter fry onion till soft then add 2 tbsp. flour with 1 tsp. salt, 1 tsp. black pepper, 1 tsp. garam masala.
Add the milk, cook till thick, mix in the shredded chicken add chopped green chilies and coriander leaves, remove and cool completely.
The filling will look like THIS
For the Dough:
In a bowl mix together 4 cups flour, 1 tsp. salt, 1 tsp. castor sugar, 2 tbsp. milk powder, 1 tbsp. yeast, 1/4 tsp baking powder, 4 tbsp. oil and 1 egg, knead to a medium soft dough with slightly warm water, leave to rise for 1 hour.
Divide the dough into two or three depending on how big you want the loaves. Proceed with viewing the subsequent steps to see how the bread is shaped.
Now divide the dough into two or three parts depending on what size loaves of chicken bread you want. Roll the dough to a rectangular shape, snip the sides with scissors or a knife, put filling in the center and fold each side so they overlap each other (like a braid) the filling will show slightly but that’s ok, brush top with beaten egg, sprinkle sesame seeds and bake on 200 degree C for 25 minutes or so.
Right after taking out of the oven apply butter well on whole bread and let it rest covered with a cloth for 2-3 min to soften the bread completely.
I always make big batches of chicken bread at a go and then wrap them well with film or foil, then put them in some sort of a cellophane bag and tie it up tight and freeze. They can keep up to 4 weeks! When you need one, you just thaw it out overnight in the fridge or keep it out on the counter until it’s thawed out, then unwrap and zap it in the micro for a minute or so until it warms up, and then splash a little bit of water using your fingertips on it and put it in the oven for about 5 minutes to freshen it back up. Becomes as good as new! 🙂

we used to make this receipe and call them fataa er when we were small…is it possible to make it with atta (whole wheat flour) instaed of plain flour..if so then can you tell me how much ingredients for the bread. Thanks a lot…love your receipes.

I was wondering if I could use milk to make the dough instead of water? Would it give me a softer dough? Secondly is it ok to prepare the bread about an hour or two prior to baking if so do I keep it in the fridge or out on the counter.

W/Salaam, you can although the bread ingredients already contains milk powder, so it does soften but you can use milk if you want for kneading. And no, you need to bake this bread immediately after shaping otherwise it will end up over proofing and smelling very yeasty.

i have tried ur chicken bread many a times and it comes our really yummy.. Thanx fo the recipe. My family actually calls it ‘fish’ becoz it looks like that… I just wanted to know can i replace the flour with whole wheat flour completely? Or is there any other recipe where i can use 100% whole wheat flour for any Kind of bread? Please help.

W/Salaam, yes you can use whole wheat flour. It will be a heavier/denser bread not as light as when you use white flour but definitely healthier. 🙂

About the elements that need to be switched on, my oven works differently (I don’t have to switch on various rods at any time) but I believe for ovens like what you are using, start with the bottom one and then midway turn on the top. Accordingly see how the results are and adjust. 🙂

I have to thank you for making my husbands birthday dinner special .I made your chicken bread, and also no bake cheesecake they both were awsum to taste and simple to make.I did cheat on the cheesecake as I did not have enough time and Philadelphia cheese so I used cream cheese added gelatin and replaced mangoes with blueberry topping and wow.Bless you.

Hi! It’s generally difficult to estimate how much water/milk is needed exactly as different flours absorb differently and different altitudes affect absorption rates. Mix half a cup of milk with half a cup of water. Warm it up, then gradually add and knead the dough. Use as much as it will take to get the dough to a soft and smooth consistency. You may need more water/milk or you may not need to use all. Once you’ve got the hang of it with your particular brand of flour, you will know for sure for next time.

I used about 1 and 3/4 cups
I used about 1 and 3/4 cups water, so I can use water/milk? great! One mistake I made, I set up my oven to 200 but it was 200F? lol. When I realized it was 20 minutes later, I adjusted to 392F is equivalent to 200c, it still came out fine, we all enjoyed the meal. Thank you again. Will do it again inshaaAllah.
