Spicy Southern Fried Chicken (with a twist!)

Isn't chicken awesome? So many ways to cook it! Well here is my version of crispy fried chicken that will absolutely leave you wanting MORE! On the PLUS side, it is sooo easy to prepare...an absolute no fail recipe.

Ingredients
1
chicken, cut into 8-10 pieces (I prefer without skin)
- marinate chicken with ingredients below for at least an hour in the fridge or even overnight.
2 tbsp.
yoghurt
1 tbsp.
tomato paste
2 tsp.
red chilli powder
juice of 1 lemon
1/2 tbsp.
coriander powder
2 tsp.
salt
1/2 tsp.
garlic paste
1/2 tsp.
ginger paste
Instructions 

Now put the chicken with its little marinade into a pressure cooker. Don't add any water, close the pressure cooker and cook for 1 whistle ONLY. This will help tenderize the chicken perfectly without over-cooking it.

Now remove the chicken from the pressure cooker and let it cool off completely. If some 'gravy' came out of the chicken in the pressure cooker, you can pour it over the chicken and let it cool. This little gravy helps infuse extra flavor into the chicken.

Once completely cool, beat an egg with 1 tbsp. milk and a bit of black pepper. Dip the chicken pieces one at a time into the egg mixture, then coat with either corn flour OR breadcrumbs (I prefer crumbs). Fry the chicken pieces on medium heat until golden and crispy.

Drain excess oil on kitchen tissues. Serve with a dip of your choice and fries!

It is different, you can try my Al-Baik Chicken recipe which is quite close to the KFC one. Al Baik

southern chicken. what if i do not have a pressure cookker ? i would love to make it

Hi Fauzia..! hope all well..! making this tomorrow hopefully! just marinated it tonite... have 2 questions- 1) i put 2 tspn salt, the marinade tastes quite salty.. is that normal.?
2) i dont have a pressure cooker, so ill b boiling in a pot.... i add water while boiling..?
3) im gona try n grill it instead of frying.. u think that will work?

Hi! You can reduce the salt according to taste, however normally 2 tsp is just perfect whenever I make this recipe. Do not add water, see if some water will be needed as the chicken continues boiling, if so then you can add some then. Normally chicken releases water when boiled. Have not tried grilling instead of frying, you can definitely give it a try.

Hi, the marinade will be enough to cook the chicken, and the chicken itself tends to release its own water too.

Hi fauzia was wondering how i boil the chicken without water.

Salam, can plz tell me if I put the chicken in pressure cooker without water even till one whistle, wont the marinade or chicken burn/stick to the base? It sounds risky..?

I normally deep fry, but you can pan fry if you like. Results are better deep fried.

Hi, are you using boneless chicken or on the bone? For boneless chicken use the same amount as per the recipe. For on the bone, divide each of the ingredients by half.

Hi fiuzia,Can I use crushed corn flakes for coating? If so should use only corn flakes or mixed wid bread crumbs?

Hi, yes you can...either way, you can mix with breadcrumbs or use just very finely crushed cornflakes.

W/Salaam, I would not recommend freezing coated chicken which is on the bone as it is very difficult for it to defrost during frying and you could end up serving raw chicken.

Salaams... wen u cook the chicken in a pan how long do u leave it on for?? Wen do we take it off
