You can lightly toast the bun for some added crispness. Apply a little of each of the liquid chutneys on the inside of the buns.Take one batata vada andpress it slightly to flattern it onto the bottom half of the bun. Form a small dip on the potato’s top by pressing with your thumb. This will be a nice resting place for all those lovely chutneys. Now smother the batata vada with more chutneys, topping them off with a teaspoon of the crunchy peanut and garlic chutney (I’ve heard that a vada pav is not ‘truly’ authentic without this!). Cover the top half of the bun and flatten gently.Now DIG RIGHT IN!! This goes well with an icy cold drink.Enjoy!
