Starfruit Juice

This exotic and refreshing drink is made from the beautiful fruit Carambola, more commonly known as the Starfruit due to its unique shape. The fruit has 5 ridges running down its side, so a cross-section of the fruit resembles a pretty star!
The Starfruit is extremely juicy and sweet when ripe, with a slightly tart citrusy taste. It normally is yellow when ripe, green when not. This fruit is rich in antioxidants and Vitamin C.
I find that apples and pears add a lot of depth to juice made from the starfruit, so I tend to add them when making Starfruit Juice.
Servings: 4 people

Ingredients
  

  • 2 big starfruits or 4 little ones
  • 1 pear
  • 1 apple
  • sugar to taste
  • 1/4 tsp. salt
  • cold water as needed
  • ice cubes as needed

Method
 

  1. Wash and cut the starfruits, you can reserve some slices for garnishing. Remove seeds if any and discard.
    Peel and chop both the apple and pear, discarding the core and pits/seeds.
    Put all the fruits in a blender jug, add some water, salt and sugar to taste. Blend, then sieve the juice, discarding the pulp.
    Taste and adjust sugar accordingly. Add ice-cubes and serve fresh!
