Spicy Prawn Pizza

Another tribute to my love for prawns!! My favourite sea-food pizza is the prawn pizza!
This recipe makes one 12″ pizza, and it is enough for 3 very hungry people or 4 if you have any sides like garlic bread, fries, salad etc.
Servings: 4 people

Ingredients
  

Ingredients for Prawn Topping
  • 200 gm small prawns shelled and de-veined - marinated for 30 minutes in some salt, lemon, red chilli powder, drop of garlic paste and tandoori masala
  • 2 tbsp oil
  • 1 capsicum chopped
  • 1 onion chopped
  • 1 tomato chopped
  • 1 tbsp tomato sauce/ketchup
  • 1 tbsp tomato paste/puree
  • 2 green chillies chopped
  • 1/2 tsp garlic paste
  • 1/2 tsp oregano
Ingredients for Pizza Dough
  • 2 1/2 cups all-purpose flour/plain flour
  • 1 1/2 tsp salt
  • 5 tbsp oil
  • 1 1/2 tsp sugar
  • 1 1/2 tsp instant yeast use 2 tsp. for colder climates
  • 2 pinches baking powder
  • warm milk mixed with a bit of water for kneading

Method
 

  1. First prepare the Topping
    Heat the oil, add the onion and fry until softened, next add the garlic paste followed by the chopped capsicum. Cook for a few seconds then add the chopped tomato. Cook until the tomatoes are soft and mushy. Add the tomato paste, chopped green chilli and the prawns. Stir them in and cook for a few minutes. You can add about 2 tbsp. or so of water if needed, but don’t add too much…we don’t want the mixture too watery. Lastly add the oregano and stir it in. Let this topping cool.
    Then prepare the Pizza Dough
    Mix all the dry ingredients and the oil, then slowly start adding the warm milk a little at a time. Get it to a soft dough, the softer the better, knead it very well for at least 8 minutes or more if possible.
    Dab a touch of oil all over the dough, then cover it and place it somewhere warm. Leave it to rise to double its size, takes about 30 minutes to an hour depending on the weather.
    Once the dough has risen, punch it down, give it a quick knead and then roll it out to about 12 inches diameter and place on your greased pizza pan/tray. Again cover the tray with a light cloth/towel and let the base rest/rise slightly for about 15-20 minutes.
    Make small slits on the base to make sure it doesn’t swell up during baking. Drizzle 1 tbsp. of ketchup over the base, spread it with the back of a spoon then sprinkle a small handful of grated mozzarella cheese. Then add the cooked prawns topping and spread that out with a spoon too. Sprinkle some extra chopped capsicum and sliced onions over the pizza. Sprinkle more cheese (I like mixing mozzarella with cheddar) over the topping and then drizzle with a little bit of ketchup to add colour if you want.
    Bake in a pre-heated oven at 180 C for about 25 minutes or until the pizza is done and the cheese is melted.
