Special Ramadhan Chutney
For some inexplicable reason I mostly make this chutney in Ramadhan! Not that it's a difficult chutney to make…far from it! It just has a special 'Ramadhan' feel to it for our family I guess. Well on occasion upon request from friends/family, I do make it (albeit rarely!) during the rest of the year too… but come Ramadhan, everyone requests a jar of my special chutney.
- 1 mango green-peeled ones that are just starting to ripen but are still completely firm
- 2 big carrots grated
- 1/2 tsp garlic paste
- 10 dates de-seeded
- 10-20 red whole chillies adjust according to heat that you like
- 1 tbsp sugar
- 2 tsp salt
- 3 tbsp ketchup
- 1/4 cup water add sparingly whilst blending
- 1/4 tsp orange food colouring optional
Put everything in the blender, add the water a little at a time and blend until it becomes a smooth paste. Taste and adjust sweetness by adding dates/sugar/ketchup and heat by adding extra chilies. Add water if you want it lighter in consistency.Once it is to your satisfaction, pour into a glass jar and refrigerate. You can also freeze this for up to a month. Use with your meals as needed and enjoy!! Goes really well with kababs, bhajias, samosas…etc
