Sheer Khurma/Vermicelli Pudding
The name Sheer Khurma literally translates to mean 'Milk with Dates' in Urdu. This is a 'festival' vermicelli pudding prepared on Eid in many South Asian countries especially Pakistan. It is a traditional festive breakfast, and can be served as a dessert for celebrations.
- 100 gm vermicelli broken into pieces
- 1 litre whole milk more if you want it on the watery side
- 4 tbsp. evaporated milk
- 2 +1 tbsp. butter or ghee
- 4-5 dates deseeded and chopped into small pieces
- 1/4 cup of assorted nuts chopped (I used cashews, almonds and pistachios)
- 1 tbsp. raisins
- 3-4 tbsp. sugar or to taste
- pinch of saffron optional
- pinch of cardamom powder or vanilla essence
Heat the milk and evaporated milk with the sugar, saffron and cardamom powder. Keep it warm.Heat the first 2 tbsp. butter until melted, then add the vermicelli and fry on low heat until they turn golden. Remove and set them aside in a bowl. Add the 1 tbsp. butter into the pan, and fry the raisins, chopped dates and nuts. Once well roasted, add back the fried vermicelli, give everything a stir then add the warm milk.Cook for a few minutes until the vermicelli is nice and soft and the milk has thickened.Serve into a bowl and garnish with some nuts and sliced dates. You can either serve this warm or chilled.Enjoy!
