Cold Pasta Salad
So refreshing especially when it’s a warm summery day and you need something tasty but not too heavy.

iceberg lettuce
shredded finely

cup
pasta
boiled and drained (I used rotini but any short/small pasta will do)

tbsp
mayonnaise

plain yoghurt

each small green and red capsicums
sliced
1
carrot
grated

potatoes
boiled peeled and cubed
some shredded/chunks of cooked chicken
optional
salt and pepper to taste

chopped green chilli

tbsp
sweet corn
1
small cucumber
chopped or sliced
1/2
tsp
cumin powder
some chili flakes if you like your food spicier
a squeeze of lemon juice
Method
Stir everything together and serve! Store leftovers in the fridge and have them cold.
