Falooda (also spelled faluda) is the perfect summer drink or when you need something cool and refreshing. It is a multi-textured dessert beverage with various cooling and delicious components. Ideal for Ramadhan!
Ingredients
- 500ml whole or skimmed milk
- 2 tbsp. sweetened condensed milk (optional)
- 4 tbsp. evaporated milk (optional)
- 1 level tsp. corn flour mixed in a bit of water
- 3-4 tbsp. sugar (bear in mind that ice cream will be added to the drink later so you don't want it too sweet)
- few drops of vanilla essence
- few drops red colour
- 10 almonds, blanched and peeled
- some fine vermicelli or rice noodles
- 1 tsp. tukmalanga seeds (basil seeds)
- 1 tbsp. rooh afza/rose syrup
Instructions
Soak the tukmalanga/basil seeds for about an hour, then drain and boil them for 10 minutes or until they are soft. Drain and set aside.
Break the vermicelli or rice noodles into 1 inch pieces then boil like you would pasta, drain and refrigerate to cool.
Put the milk (and the condensed plus evaporated milk if you’re using them…they make the drink richer) in a pan and add the sugar, vanilla and a few drops of red colour…just enough to turn the milk slightly pink. Bring to a simmer, then add the corn flour paste and simmer together on medium heat just until the milk thickens slightly.
Turn off the heat and let the milk come to room temperature. Add the tukmalanga seeds and the vermicelli, and the rose syrup/rooh afza. Chop/grind the nuts finely (save 2-3 for garnishing). Add the chopped nuts into the drink and stir together.
Refrigerate until chilled. Serve with a scoop of vanilla ice-cream (or any ice cream that you like). You can garnish with slivers of blanched almonds, or fruits like grapes. You can even garnish with pieces of colourful jelly.
Drizzle some rose syrup on top and serve! 🙂

if we r using ice crea m finally so what is the need for whole milk or skimmed milk is it some thing like ice cream?????plz guide me for that
It helps to enrich the drink itself, ice-cream is just added as a topping. Whole milk is full fat regular milk, skimmed is the one which has less fat in it.

W/Salaam, these are seeds that are normally used in cold drinks. They have a tendency to cool you down during scorching summer heat or after a long day of fasting.

I usually boil them yes for that short time.
Could we boil the vermicelli in the milk instead of separately? They get mixed anyways, right?
They boil faster in water than in milk, and they get drained so all the excess starch is removed…but sure, you can boil them in the milk if you want.

whats the difference between soaked tukmalanga and boiled tukmalanga?? is there any difference in taste..??
Boiling softens them further. No difference in taste, tukmalanga actually have no taste. They help in cooling the body.

Sorry I do not know the name in Urdu. It is concentrated milk (unsweetened) that comes in a can. Should be easily available from any supermarket. 🙂
