Chocolate Brownies

Quick and simple moist, cakey delicious brownies! These taste awesome as is, or with a chocolate frosting or with a scoop of ice-cream. YUM!

Ingredients
1/2 cup
butter, room temperature
(113gm)
1/2 cup
sugar
(100gm) (I then reduced about 3 tbsp. from it coz knew I was going to serve this with ice cream and didn't want the sweetness to go overboard)
2
eggs
1/2 cup
all-purpose flour
1/3 cup
unsweetened cocoa powder
(40gm)
4 tbsp.
warm milk
pinch of salt
1/4 tsp.
baking powder
1 tsp.
vanilla essence
Instructions 

Heat the butter in a big bowl until melted. Whilst still SLIGHTLY warm, add the sugar and using an electric mixer, beat together thoroughly (about 5-10 minutes). Then sieve the cocoa powder into this butter/sugar mixture and again, beat until creamy. Add the vanilla and beat it some more. Now add the eggs, one at a time, beating well after each addition to make sure it's well incorporated.

Remove the electric beater and slowly sieve the flour, baking powder and salt into the bowl a little at a time, mixing with a spatula or wooden spoon. Alternate with adding the warm milk as well and stir. Once everything is JUST incorporated (DO NOT OVER-MIX), pour the brownie batter into a greased 8x8 inch pan. (You can sprinkle some chocolate chips or nuts on top or stir them into the batter if you like, I left mine plain and simple)

Bake in a pre-heated oven at 170C for 25-30 mins. Do not over-bake, a toothpick stuck into the brownies should come out slightly moist, not completely dry. So best to start checking on them at about 20 mins and then give them extra time if need be. Serve warm or cooled, with a cup of tea or coffee or as a yummy dessert served with a big fat dollop of vanilla ice-cream and some brownie crumbs for a cute look.

Hi, yes that is why I wrote once the butter is slightly warm. It should be OFF the stove but not yet completely cooled to room temperature.

W/Salaam, nope you can omit the salt when using salted butter.

Butter is tastier and made from milk, blueband is artificial.

sugar used in the recipe, is it grinded or normal?
my brownies didnt rise too much (were 1/2 inch thick) though the baking powder was fresh....should i increase the quantity of baking powder or add baking soda??

Not grinded, just regular granulated sugar. No do not add more baking powder, but make sure the baking powder you are using is fresh.

i ried brownies but its surfaces got cracked,what shoud i di to make it smooth??

hello fauzia api :) today i tried this recipie.. taste was good .. i used pan of 8*8 as u mentioned, n followed the steps, but my final outcome was just half inch high :( what caused it not to get fluffy ?

Hi, normally brownies are not supposed to be high and fluffy like cakes. Then are supposed to be a thin layer cut into squares. :)

Hi Fauzia, I just want to know in baking 1 cup is equal to 100gms or 250 grms?I m going to make gulab jamun this weekend I'll take 100gms of nido or 250gms of nido?

Hi, actually 1 cup isn't necessarily 100gm or 250gm. Different ingredients have different weight. Like 1 cup flour is 120gm, 1 cup sugar is 200gm and 1 cup butter is 225gm. Some things are heavier than others. Nido is the same as flour. 120gm.

Hi, sorry I do not have an eggless version of brownies, however there is an eggless moist chocolate cake recipe in the cakes folder. :)

Aoa. i tried ur receipe. the taste n texture was good but it didnt rise up . it was a half inch cake. i baked it in 8x8 square pan n followed the step but i had added the milk in the end after adding the whole maida(little at a time).i have tried it twice n every time i get the same result.

W/Salaam, brownies are not supposed to be like cakes, in that they do not rise and puff up. If you google images of brownies you will notice they are flat squares. :)

dear fauzia sister i tried ur recipie it was amazing family was asking more :)....but i have a question as u mentioned we can make 24 brownies by this recipie but mine were just eight pieces.....y is tht so?it was moist soft fluffy and yummy everything was perfect bt quantity was less :(

Sorry that was a mistake it should say 1 dozen (12 pieces). I normally cut mine small to make 12 squares. :) Thanks for the lovely feedback!

Hi, you should always preheat at the temp given in the recipe. As for time, there should be some indicator on the oven to let you know when the temp has been reached. For example it takes about 15-20 minutes to reach 180 C depending on the size of the oven.

Hi. My oven works differently (I don't have to switch on various sections of the oven at any time) but I believe for ovens like what you are using, start with the bottom one and then midway turn on the top. Accordingly see how the results are and adjust. :)

Hi, sounds like you might be overbaking them. Bake them for slightly shorter.

Hi fauzia. How cum my brownies don't cum up at one level?either it cuts up on the side or in the centre.can u pls advise where I must b gng wrong??n wot the batter consistency? ??mime is usually watery n I hv to add more flour to it.it means more than one cup.i bake at 160.

Hi, sounds like a heating problem in the oven. As for the consistency, if you measure everything carefully EXACTLY as per the recipe, there should be no problem at all. If you add flour you are ruining the balance of ingredients and your results will not be as they should. Please follow the recipe as given.

The bitterness could be from either your cocoa powder or the baking powder used. You can melt chocolate and coat the brownies to add sweetness.

hello fauzia? I used this recipie xcpt warm milk..but my brownie turned out too moist chew n not dat much as a regular cake is that ok? n when I kept them in fridge it becomes hard? so brownie should be soft like a cake or moist n chew? thank
