Servings : Serves 4
The ideal soup for when you’re feeling under the weather or when you want something light and healthy. Makes for an excellent starter too!
Ingredients
- 2 pieces chicken with skin, leg and thigh
- 1 onion. sliced
- 1 carrot, roughly chopped
- coriander stems
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic paste
- 1/2 tsp ginger paste
- 3-4 whole black peppercorn
- 1 green chili
- 3 cups water
Other Ingredients
- 1 tbsp corn flour mixed in water to form a paste
- 1/4 cup sweet corn, roughly grinded
- 1 egg (lightly beaten)
- 1 onion, chopped fine
- 1 tsp butter
- salt and pepper to taste
- 1 tsp soya sauce
- 1 potato, cubed, boiled and smashed, then blended with some water or soup
Instructions
Put the chicken and all the ingredients in the first list in a pan. Boil on low heat for about 15-20 minutes or until chicken is tender.
Remove chicken pieces, let them cool, peel off skin n discard it, and then shred the chicken. Sieve the soup/broth and discard the onion/carrot/coriander/peppercorn.
Melt the butter and add the chopped onions. Fry until translucent then add the shredded chicken pieces and stir for a min. Next, add the chicken soup/broth, crushed corn and mashed potato.
Bring to a simmer, add the corn flour and boil on medium low until it thickens. Season with salt and pepper.
Add the egg and quickly beat it in with a fork so it forms threads as it cooks.
Splash some soya sauce, chopped coriander or lemon juice and serve!
Looks Yummmm <3
Can I use chicken without skin?
Yes you can.
Is there a place I can buy your cook book
Hi, at the moment we do not have a cook book published yet, but soon inshaAllah.
Aslm alkm Fauzia, how much water should be used when mixing corn flour?Should it just be a little bit to make a thick paste?
thanks so much for sharing ur recipes with us, love your website 🙂
W/Salaam, thank you! Yes just a little bit of water to make a smooth paste. It doesn’t have to be very very thick, as long as it is smooth and without lumps, it’s good enough.
one more question, how many servings is this recipe?
thanks
Serves 4-5.
ASSALAMMALAIKUM WA RAHMATHULLAH fauzia u have done n great job by publishing ur recipes starters r lucky n by the ways a lots of sawab for u MAY ALLAH BLESS U
Hii. I just visited ur website 2day n am loving it. Wil surely try ur recipies. Thx for sharing.
Hi Fauzia,
I just went through your website, and have found interesting recipies. Inshallah will try.
Thnx for sharing, God bless you.
Slms fauzia why do we have to add the onion and carrot whilst boiling the chicken as we actually discard the veggies?can we not use these veggies.
W/Salaam, the veggies are added to infuse their flavour and nutrients into the broth/soup. You can use them if you like, but normally the flavour will be already retained in the soup.
WHAT IS PEPPER CORN??
Whole pepper.
Thz apa..i made it…its very nice
what effect does the potato have? i normally dont put it
It helps thicken the soup and make it even more tasty and filling.
Salam ,Fauzia great recipes,i have a question ,u mentioned corriander stick, what exactly that means?
jazakallah khairan for yummy recipes,u made my food more tastier,my hubby is very impressed, alhamdulilah.
Also the onion in the recipe is regular onion or the green one?
Regular red onions.
W/salaam, thank you. It means the stems of the coriander/dhania. Don’t just chop the leaves and discard the stems, add those too and they will increase the flavour in the soup.
I’m inspired by your presentations. Keep me informed.
hi fauzia i made this soup yesterday its taste was really gud but after about 5 minutes of serving the soup it turned out runny like water.i followed ur recipe but what would b the reason can u plzzz help me out of this??????????
Hi, did you add cornflour? You can easily mix some more cornflour with a bit of water and boil it in the soup until it thickens slightly to your preference.
