Gram Flour Bhajias

The snacks on the fore-front of the photo above are known as Gram Flour Bhajias. They are made of thick slices of boiled potatoes, dipped in a spicy gram flour batter and then fried until the coating is crisp and golden.

Ingredients

  • 500 gm potatoes
  • 1 tsp salt (or to taste)
  • 1 tsp chilli powder
  • 2 chopped green or red chillies
  • 2 tbsp chopped fresh coriander
  • 1/4 tsp garlic paste
  • 1/2 tsp cumin powder or seeds
  • pinch of turmeric powder
  • 1 cup gram flour/besan/chickpea flour
  • water as needed
  • oil for deep frying

Instructions

Boil the potatoes until they begin to soften but are not yet completely done. They have to be firm enough for you to be able to peel and slice. Remember, they will be fried later so even if they are not completely done, they will cook some more during the frying and will be fine.

Once they are cool, peel and cut into half inch thick slices.

Separately sieve the gram flour into a bowl. Add salt, red chilli powder, turmeric and cumin. Start stirring in a little water at a time until the mixture is a smooth batter not watery/runny, it should be slightly on the thick/heavy side. Throw in the coriander, chopped green chillies and garlic paste. Mix together.

Heat your oil until its hot enough for it to sizzle when u drip a bit of gram flour batter into it. When it's ready, dip your potato slices into the gram flour one at a time and fry in the oil. Drain on paper napkins and serve hot with any dip/ketchup.
