A delicious middle-eastern take on a sandwich made of pita bread and a filling of chicken kababs.

Ingredients for Pita Bread

  • 1 1/2 cup all-purpose/plain flour
  • 3 tbsp. oil
  • 1 tsp. salt
  • 1/2 tsp. instant yeast
  • 2 tbsp milk
  • some warm water

Ingredients for Chicken Kababs

  • 500 gm minced chicken
  • 1 grated onion
  • 1 tsp. garlic paste
  • 1/2 tsp. ginger paste
  • 1 tsp. cumin powder
  • 1 tsp. salt
  • 2-4 tbsp breadcrumbs
  • juice of 1 lemon
  • 2 tsp. black pepper powder
  • 1 chopped green chilli

Instructions

For Pita Bread

Add the milk to the water and heat it up so it's slightly warm. Mix the flour, oil, salt and yeast then make a hole in the center and pour the water & milk, then gently combine, and knead thoroughly until the dough is soft and smooth.

Wipe some oil on the palms of your hands and rub over the lump of kneaded flour, then cover and let it rest for about half an hour.

Once rested, divide the dough into 4 equal-sized balls. Roll out each ball gently and evenly (do not lean/press down hard on the ball of dough, you need to use a light hand) to a thickness of a little more than a quarter inch.

Place the rolled-out pitas on a lightly floured surface and cover them with brown paper or light towel so that not too much air can get in. Leave them to rest for just 10 minutes.

Heat up a heavy roti pan, and place one roll in the center. Cook each pita on both sides like you would rotis or chapatis. You can dab a tiny bit of oil if you like whilst cooking them.

Cover them to retain softness and set aside.

For Chicken Kababs

Mix everything together well. Divide the mixture into 8 balls. Shape them into patties, try to flatten them well.

Heat some oil in a pan and shallow fry the kababs until cooked on both sides. Drain on tissues.

To assemble, take a pita bread, spread some mayo mixed with ketchup, sprinkle extra spice if you like. You can drizzle tamarind sauce if you like. Add chopped lettuce, onion rings, tomato slices…anything you like. Top with 2 of the fried kababs. Fold the pita in half to form a sandwich.

Serve with fries or some cold pasta salad.
