Yes, same awesome cheesecake…different home-made topping!! 😀
You can even make these in small individual bowls and serve individually instead of having to slice one big cheesecake.

Ingredients
- 8 oz. cream cheese, at room temperature (1 package, about 250gm)
- 8 oz. COLD whipping cream (1 cup)
- 1 tsp. vanilla essence
- 1/4 cup grinded/caster sugar
- 1 tsp. lemon juice
Ingredients
- 150gm Digestive biscuits (about 13-15 biscuits)
- 2 tbsp. cocoa powder
- 2 tbsp. powdered sugar
- 85gm melted butter
Ingredients for Strawberry Sauce
- 2 cups fresh or unsweetened frozen strawberries
- 1/3 cup sugar
- 1-2 tsp. cornstarch
- 1/3 cup water
- red food coloring (optional)
Instructions
Make sure you use a GOOD QUALITY thick cream cheese, like Philadelphia or DairyBelle. Spreads will not work for this recipe as they are too light in consistency.
For Cheesecake
Crush the digestives either in a plastic bag with a rolling pin or in a processor. Then add the cocoa powder and sugar, pulse or mix until combined. Add the melted butter and mix well.
Press in an 8″ spring form pan. Cover and chill the base in the refrigerator whilst you prepare the cheesecake filling.
Whip the cream until peaks form. Cover and refrigerate.
Add the sugar and lemon juice to the cream cheese. Mix well until the cream cheese no longer has any lumps and the sugar is completely dissolved. Do not rush past this stage, take your time. 🙂
Once the cream cheese is smooth smooth SMOOTH, get the whipped cream from the refrigerator and add it into the cream cheese. Add the vanilla. Now, using a whisk, mix the two until the mixture is smooth, stiff and thick. You can use an electric or hand mixer at this stage but be careful NOT to over-beat it as the whipping cream might curdle if you do that.
Pour the mixture onto the prepared crust, cover with cling film and allow to set, at least 5 hours but preferably overnight.
Now you can prepare the sauce.
For Strawberry Sauce
Wash and hull fresh strawberries. If using frozen strawberries, thaw before using. Chop the strawberries into small pieces. Reserve a third of the chopped strawberries.
Mix water and cornstarch until dissolved, pour into a pan and add the strawberries and sugar. Simmer until the sauce thickens. Pour the sauce into a blender and blend until smooth, then pour it back into the pan.
Add the reserved third of chopped strawberries and simmer for another minute. Finally add the vanilla essence and some drops of red food coloring if you like.
Refrigerate until chilled before serving over your dessert.

Hi and thank you! Puck is a little light in consistency so the cheesecake may not set as well as other brands like philadelphia. You can use it but instead of making a proper full cake, make small individual glass servings so that you don’t have to slice when serving.

i used Philadelphia fat free cream cheese because could not find the regular one. after applying the whipping cream and cream cheese mixture on the crust, i left it over night in the fridge to set. however the cake (white part) turned out to be little runny and not set as cheese cakes usually are. Also after i mixed together cream cheese and whipping cream, whisked it for around 5-7 minutes with an electric mixer on normal speed. Didn’t mix for too long to avoid the curdling. Is it because of the fat free cream cheese or is it something else?

Hi, yes fat-free will not give the same results as full-fat. Do try it again with the full fat version please or add a bit of gelatine powder (about 1 tbsp) if you are using the fat-free again and let me know how it turns out.

I would go with digestives, that is the main one that I prefer. You can also use graham crackers or oreos.

Hi Fauzia. I tried making your strawberry cheesecake recipe. Looks good, tastes amazinggggg, only problem is the consistency is a bit runny. I used Kiri cream cheese, and President whipping cream (35.1% fat). I cannot understand why the cheesecake didn’t set right (I couldn’t find Philadelphia cream cheese at the market). Please can you tell me how thick the whipping cream should be because I feel the whipped cream made the cheese a little runny.
Kiri cream cheese is a bit lighter in consistency than Philadelphia, that may have had something to do with it not being firm. You can try adding 1 tbsp or so of gelatin to help firm it up next time. The whipping cream should be whipped first to soft peaks, then added to the whipped cream cheese and the two need to be whipped together until firm. Over whipping the cream makes it runny, that may also be something else that you did wrong. Hope the next attempt is better! 🙂
Thanks for your reply, really appreciate your help. Another problem I faced was regarding the crust. When I took the cheesecake out of the refrigerator and tried to slice it, it wouldn’t cut past the crust because it was too hard. What should I do about the crust?
I think this depends on the digestive biscuits used. Try reducing the amount of butter and see if that improves it.

W/Salaam, spreadable will work but the cheesecake will not set, it will be soft. You can make it in individual bowls so you won’t need to slice it up on serving. Gelatin comes in many different brands, have never used any that smells terrible.
