Servings : 40 cookies
Tiny and delicious bites of the most melt-in-your mouth, crumbly cookies ever!! Easy to make, and they taste outstanding!
Ingredients
- 2 cups all-purpose/plain flour
- 1/2 cup custard powder
- 1/2 cup pure icing sugar
- 250gm unsalted butter
- 1 tsp. vanilla essence
Instructions
Bring the butter to room temperature. Pre-heat the oven to 180 degrees C.
If you have a food processor, mix the butter with icing and vanilla. Process for a couple of minutes or until well combined. You can use a hand-mixer.
Add the flour and custard. Pulse until JUST well combined. Do not over-process coz then your cookies won’t have a fine delicate crumbly texture.
Shape as desired and bake on greased trays! (12-15minutes)
I rolled teeny balls with my hands, placed them on the tray and flattened them slightly with a fork. Dip the fork in flour to avoid it sticking to the cookies. If the cookies crumble or crack during shaping, add a few drops of milk and try again.

Salam fauzia, I would like to try your custard biscuits they look very yummy but just wanted to confirm that I have got measuring cups and in that 1 cup is 250gms and half cup is 125gm. So can I use my measuring cups for this recipe or use your measurements in which one cup flour is 120gms. I want to try this recipe tomorrow so please reply as soon as possible.

W/Salaam. Just to clarify for you, the cups may SAY 250gm, but really it depends on the ingredient being measured. Not all ingredients weigh the same. For example if you take 2 exact same bags, fill one with rocks and another with feathers, obviously one will weigh more than the other even though the SIZE of the bag is the same. Get me? So 1 cup of flour is ALWAYS 120gm. and 1 cup of sugar will always be 200gm. Same cup, different ingredients so different weights. Best to go by a scale to confirm how much your cup can hold of each ingredient.

Am worried that the addition of butter will throw the balance off and the cookies may end up being too greasy. Am really surprised as this is a recipe that has been tried by very many people and it seems to have worked out ok with the ratio of ingredients given. You can try and add a little bit of beaten egg, it probably would be a safer bet than adding more butter.
