A spicy, flavourful and aromatic chicken recipe, easy to prepare and with finger-licking results.
Ingredients
- 1 kg to 1.5kg whole chicken, without the skin, divided into 8-10 pieces (you can also just use boneless breast or thighs, cut into chunks)
- 4 tbsp oil
- 3 medium onions, finely chopped
- 1 tbsp cumin seeds
- 1-2 green chillies, slit
- 3/4 cup plain yoghurt, whisked until smooth
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp red chilli flakes (optional)
- 2 tsp ginger paste
- 2 tsp garlic paste
- 1/4 tsp black pepper powder
- 1/2 tsp garam masala powder
- 1 tbsp lemon juice
- 2 tbsp fresh chopped coriander (for garnishing)
Instructions
Heat the oil in a pan, then add the whole cumin seeds. Let them splutter then add the green chillies followed by the chopped onions. Saute until the onions are caramelised and dark golden brown in colour.
Next, add the chicken pieces and stir fry on high heat until the chicken turns a light brown. Then add the ginger and garlic pastes, keep stirring for a couple of minutes.
Add the salt, chilli flakes, turmeric, coriander and cumin powder and stir for another minute. Then stir in the yoghurt and reduce the heat to low. Cover the pan and allow the chicken to cook/steam gently on the lowest heat for about 20-25 minutes or until cooked through. Make sure to check on it every 10 minutes or so to ensure it is not sticking to the bottom of the pan. If you find that it is, add a small splash of water.
Finally squeeze in the lemon juice and sprinkle in the black pepper and garam masala. Give it a final stir. Garnish with fresh coriander and serve either with rice, naans or chapati.

Hi, I have just made this but it doesnt make much sauce. Can you suggest a way to make more sauce without diluting flavour? Maybe a tin of tomatoes?
Hi! It’s normally a dry-gravy kind of dish, but yes you can add a tin of tomatoes for added sauce. For best flavour, it would be best to add the tomatoes in after the chicken so the tomatoes get the full depth of flavour. You can add the tomatoes in the end but allow the sauce to simmer for a few minutes so the flavours are infused (if the chicken is already tender, take it out in a plate so it does not get over-cooked, and keep it covered).
assalamu alaikum to the both of you. This is a yummy looking dish which I am eager to try. What would you use instead of the coriander powder if you happened not to have any at hand? Is that dhania you used to garnish it with? Kudos to you for the work you are doing!
W/Salaam, simply omit the coriander powder if you do not have it or use some extra cumin powder. And yes I garnished with coriander/dhania.

i was just wondering how much of tomato puree and grinded tomato to put so as to make it a bit wetty rather than letting it stay dry as it is. And what if i opt to put dhania instead of the coriander powder, how much of dhania am i supposed to use? waiting to hear from you soon 🙂
W/Salaam, about 1 cup of grinded tomato is fine although you can add more for extra gravy. Coriander powder is dhania powder, unless you mean freshly chopped? In that case just 2 tbsp of freshly chopped is fine.

W/Salaam, you can make a gravy with just tomatoes alone, or if you want you can add yoghurt too, up to your personal taste. I prefer it as is, without the extra gravy. You can use tomato paste in place of puree. The store-bought concentrated variety.
It doesn’t mention when to add the garam masala n red chilli flakes. i added with youghart.
That is ok, garam masala is normally added right at the end before turning off the heat.

Hi and thanks! No it means 1 breast of the chicken, which would be around 200-250gm depending on the size of the chicken.

Hi, it is added during step 9. I would not recommend you to omit it as it gives a good colour and gravy to the dish. You can use curd if that is available to you.
