Serves 1

One of the quickest and most colourful breakfast dishes I know!

eggs, lightly beaten
diced tomato
onion, finely chopped
green chillies, chopped
(omit or reduce according to your taste)
2 tbsp.
chopped coriander
1/4 tsp.
garlic paste
2 tbsp.
salt and peper to taste
1 tbsp.
oil or butter

Beat all the ingredients lightly.

Heat 1 tbsp. of butter or oil in a non-stick frying pan on medium heat and swirl it around to cover the entire base of the pan. Pour the mixture in the pan and do not move the omelette until the bottom is solid/stable. Check to see if the bottom is browned sufficiently, and if so, flip it over to brown the other side.

Serve hot with toast and tea! :)

Any good melting cheese will work, like mozzarella or cheddar. But yes I do agree, simple spanish omelette is fantastic as it is. :)

Which type of cheese to b specific. We hv pretty strong cheese out here. Cheese ain't my cup of tea. Simple Spanish omelette is awesome.

simply delicious. i dont like cheese in eggs.... its good without cheese. i add ginger also instead of garlic. ive never tried it with garlic. but ill try it tomorrow with garlic.
