Spanish Fiesta Rice
When you think of the word 'Fiesta' which is Spanish for 'Party/Feast or Festival', you can't help but think of wonderful colours, scintillating aromas and exotic flavours. That's what this dish is all about. A simple meal, that is brimming with nutritious qualities and looks just as delicious as it tastes! A basic rice dish, that has black beans in it, red and green pepper, tomatoes, sweet corn, lime juice and pieces of grilled chicken.
Heat the oil, add the onions and spring onions. Stir fry until translucent, then add the ginger and garlic paste. Cook for a few seconds and add in the bell pepper and sweet corn. Stir fry for about 2 minutes, then add the rice and all the other ingredients EXCEPT the chopped tomato, coriander leaves and lemon juice. Cook together, tossing lightly until the rice is heated through and the flavors have been well incorporated. Lastly, add the tomatoes, lemon juice and coriander leaves. Mix well, cover and keep on low heat for about 5 minutes, then turn off the heat and serve!
You can use beans that are leftover from a previous bean curry that you made, adds more flavor that way. :)
