Singaporean Rice

One of my favorite pasta dishes, the combination of flavors in this meal is truly exceptional. This dish is made up of layers of rice, spaghetti, chicken cooked with veggies, mayonnaise sauce and topped off with garlic and green chilies fried in butter. I have tweaked a multitude of recipes until I finally came up with something that is to my liking. Not only does the dish appeal to the eyes, the aroma that wafts from the dish once its prepared is irresistible.

Ingredients for Mayonnaise Sauce
1/2 cup
mayonnaise of your choice
3-4 tbsp
pinch of salt
tiny touch of garlic paste for flavor
2 tsp.
red chilli powder
Ingredients for Chicken and Veggies Gravy
1/2 kg
boneless chicken (preferably breast) cut into cubes
capsicum chopped very finely
(I used 1 red and 1 green for the color combination)
carrot, cubed finely
onion chopped very fine
1/2 tsp.
ginger/garlic paste
green chillies chopped
(if you don't want the dish too spicy you can omit this)
juice of half a lemon
splash of soya sauce
2 tsp.
black pepper
1/2 tsp.
cumin powder
2 tbsp.
chopped coriander
1 tsp.
red chilli flakes or chilli powder
1 tbsp.
1 tbsp. corn flour mixed in 1/2 cup water
3 tbsp.
salt to taste
200 gm
Spaghetti or Noodles
1 cup
3-4 cloves
green chillies
1 tbsp.
oil as needed

Prepare the Rice

You will need 1 cup of rice, bring a pot of water to boil, add salt and 1 tbsp. oil into it. Add rice that has been pre-soaked for 20mins. Boil until rice is almost done, drain the water and put the rice back into the pot. Cover and put to steam (on dum) for 15 minutes.

Prepare the Spaghetti

You will need 200gm spaghetti pasta. Boil as per package instructions, adding some salt and oil into the boiling water. Drain, then drizzle 1 tbsp. of oil on the pasta to prevent it from clumping together. Put in a hotpot and set aside.

For the Mayonnaise sauce

Mix all ingredients together and adjust taste. Set aside.

For the Chicken and Veggies Gravy

Heat the oil in a pan, add the onions and fry until they are translucent. Add the chicken, ginger and garlic paste. Fry for a few minutes until the chicken color changes. Then add the capsicum and carrots. Stir fry until the chicken is about done (should take about 8-10 minutes). Add the green chillies, chopped coriander, soya sauce, ketchup and lemon juice, plus chilli flakes, salt and pepper. Cook together for 2 minutes, then add the corn flour mixed in water. Lower the heat and let the gravy simmer for a few more minutes. You can add some extra water if you want extra gravy or if you find it too dry. Adjust taste and turn off the heat.

In a small pan, prepare the garlic and chilli topping. Take 3-4 cloves of garlic and chop them up into tiny bits. Then chop 2-3 green chillies. Add 1 tbsp. butter to the pan and let it melt, then add the garlic and chili. On low heat, fry these together for a few minutes until the aroma is great and the garlic is fried.

For the layering

Take a dish, pour the rice to cover the bottom. Then follow it with the spaghetti to cover the rice. Then pour the chicken gravy over the spaghetti. Drizzle the mayonnaise sauce all around the edges and some in the center. Finally sprinkle the buttery garlic and chilli all over and serve!

The dish can be reheated easily in the microwave, or you can prepare all the layers in advance and then give them a quick heating and pile them up just before serving.

i tried this dish turned out FAb! Thanks loads Fauzia!

i even added on the top at last some fried bite sized spaghetti, i fried them in a non stick pan with very little oil. and added them on top...those crispy bites felt yummy!

Is it me or is the combination of spaghetti and rice totally normal?

Trust me you will change your mind after eating it! The combination does sound odd but its so delicious and completely blends you have to try to believe it,esp. with the mayonnaise sauce its perfect.

W/Salaam, yes you can although then you are not making singaporean rice, you will be making spaghetti with chicken. :)

Fauzia, although it sounds amazing and delicious.
But it is too much of the efforts.

U can boil rice and spaghetti the night before along with the mayonnaise sauce and day you can make the chicken gravy and fry the spaghettis in some butter(they will be fresh and tasty)when using them. This way you can manage.its worth the effort.

Best results is with chicken, have never tried this with beef or mutton.

It mean cover the pan with a tight lid and put it on very low heat so the food inside gets a chance to gently steam until done.

Does the garlic paste in the ingridients mean garlic that is mashed or is it some kind of sauce?

Yes mashed garlic.

What if I mix up everything instead of doing the layers?? Wil it affect the taste or the result??

Salaam my husband is allergic to eggs hence I can't make the mayo!will it make a difference if I don't use it or what can I substitute it with?

W/Salaam, the mayo sauce is just an extra sauce normally served on top to make sure the meal isn't too dry and it lifts the flavours. If he is allergic you can leave it out but drizzle some ketchup or make the chicken mixture a bit more saucy.

Difficult to estimate as people have different tastes, but about 1 tsp to 1 and a half tsp is a good estimate.

Asalaam alaykum, I've made this twice now and each time it was too spicy, I reduced the chillies by half the second time as well :( I used low fat mayo could if be that ? Jzk khayr

W.Salaam, this is supposed to be a spicy dish but you can reduce or even omit the spice to suit your personal taste. :)

If I want to make without noodles, shall I just double the rice to 2 cups?
