The name Sheer Khurma literally translates to mean 'Milk with Dates' in Urdu. This is a 'festival' vermicelli pudding prepared on Eid in many South Asian countries especially Pakistan. It is a traditional festive breakfast, and can be served as a dessert for celebrations.

Ingredients
100gm
vermicelli
(broken into pieces)
1 litre
whole milk
(more if you want it on the watery side)
4 tbsp.
evaporated milk
2+1 tbsp.
butter or ghee
4-5
dates, deseeded and chopped into small pieces
1/4 cup
of assorted nuts, chopped
(I used cashews, almonds and pistachios)
1 tbsp.
raisins
3-4 tbsp.
sugar or to taste
pinch of saffron
(optional)
pinch of cardamom powder or vanilla essence
Instructions

Heat the milk and evaporated milk with the sugar, saffron and cardamom powder. Keep it warm.

Heat the first 2 tbsp. butter until melted, then add the vermicelli and fry on low heat until they turn golden. Remove and set them aside in a bowl. Add the 1 tbsp. butter into the pan, and fry the raisins, chopped dates and nuts. Once well roasted, add back the fried vermicelli, give everything a stir then add the warm milk.

Cook for a few minutes until the vermicelli is nice and soft and the milk has thickened.

Serve into a bowl and garnish with some nuts and sliced dates. You can either serve this warm or chilled.

Enjoy! :)
