Serves 4

A very simple, light and delicious pudding that is quick to make and perfect for a refreshing after-meal dessert.

whole milk
2 heaped tbsp.
fine semolina/sooji
5-6 tbsp.
1 tsp.
vanilla essence
a few drops of red food coloring
scoop of vanilla ice-cream
crushed nuts for garnishing

Mix the semolina in some of the milk to form a thick paste.

Pour the rest of the milk into a pan, add the sugar and red food coloring (just enough to turn the milk a nice pink color). Bring to a boil and then add the semolina paste and the vanilla essence. Keep the heat on low and simmer gently whilst stirring until it thickens. This should take about 5-8 minutes to reach the consistency of custard pudding.

If you prefer it thicker, simply mix some more semolina in a bit of milk and add it in, simmer some more. If you want it thinner, add a bit of milk and boil for a bit. Keep in mind that the pudding will thicken some more as it cools in the fridge once it is done.

Turn off the heat, add the scoop of vanilla ice-cream and stir until it has melted into the mixture. This adds some extra richness and flavor to the pudding. Now pour the pudding into serving bowls, garnish with nuts and allow to cool. Cover and refrigerate until cold.

Serve and enjoy!

You can leave it out.

Made your pudding, must say it was simply awesome :)

salam. i made dis but da semolina does not set as a pudding wat could b da reason

Fauzia's Kitchen Fun's picture

W/Salaam, did you boil it long enough? Make some more of the semolina paste and add it in and simmer some more until it thickens.

I made it and its delicious. Although I modified a little. Aside from sugar I added brown sugar and a can of evaporated milk.. It gave a pudding a very nice light brown texture and it was delicious. I would highly recommend people to try the evaporated milk and brown sugar.
Even if you follow the exact recipe of fauzias.. it is devine.. Fauzia you rock:)

Fauzia's Kitchen Fun's picture

Yes you can.

Fauzia's Kitchen Fun's picture

W/Salaam, 1 heaped tbsp is about 25gm.

Asalaamu alaykum

i tried this and it tasted nice but the semolina had some lumpy bits once added to the boiling milk, what could have been the reason?

Fauzia's Kitchen Fun's picture

W/Salaam, did you mix the Semolina in some milk to form a paste as directed before adding to the boiling milk?

can I use non fat milk instead of whole milk. will the pudding hold together?

Fauzia's Kitchen Fun's picture

Yes you can. And this pudding is not supposed to set. Just thicken like custard.

assalamu alikum

Fauzia's Kitchen Fun's picture

salam sis ........can v add more semolina.... or is only 2 tbsp. d r8 amount

Fauzia's Kitchen Fun's picture

W/Salaam, 2 tbsp is normally enough to thicken the pudding. If you find the pudding too light you can add more semolina. It will make it thicker.

can i use fresh milk?

Fauzia's Kitchen Fun's picture

Fauzia's Kitchen Fun's picture
