Scrambled Egg-Whites

A healthy alternative for breakfast or a quick light dinner. You can make this as an omelette or scramble it, whichever you prefer. I like to add spinach, onion and tomatoes in mine to give it more flavour and make it more nutritious.

Ingredients

  • 2-3 egg whites
  • pinch of salt
  • some black pepper
  • 1 tsp olive oil
  • handful of fresh baby spinach, chopped
  • 1-2 chopped green chillies
  • a few plum tomatoes or 1 regular tomato chopped
  • 1 small onion, diced
  • 1 clove of garlic, finely chopped

Instructions

Heat the oil on a non-stick pan and swirl it around so it coats the bottom of the frying pan. Once hot, add the onions and garlic and fry them a bit to soften. Then add the tomatoes and green chilies followed by the egg whites.

Just before the egg whites begin to set, sprinkle the spinach on the top, then scramble everything together and cook on medium heat until done. Serve warm with some toasted whole-wheat bread and enjoy!
