Steamed Chicken

This is a healthier method of preparing chicken whilst still delivering loads of awesome flavour. By incorporating aromatic and flavourful spices, even simple steamed chicken can be something spectacular.

skinless chicken quarters
4 tbsp
thick plain yoghurt
4 tbsp
fresh coriander
1 tbsp
lemon juice
2 tsp
garlic paste
2 tsp
ginger paste
1/2 tsp
turmeric powder
1/2 tsp
garam masala
1/2 tsp
cumin powder
3/4 tsp
1/2 tsp
red chilli powder
green or red fresh chilli
1 tbsp
oil or butter

Clean the chicken quarters and make a few shallow slits on each piece. Pat dry and set aside.

In a blender, mix the yoghurt, fresh coriander, lemon, ginger, garlic, fresh chilli, chilli powder, turmeric, garam masala, cumin powder and salt. Blitz to combine. Apply this on the chicken pieces. Cover and refrigerate for at least 2 hours or up to overnight.

Remove the chicken from the fridge half an hour before beginning to cook. Put a wire mesh or steamer in a pan over simmering water. Place the chicken pieces on the steamer and cover the pan. Allow to steam for about 25-30 minutes over medium heat. Remove, cover and let the chicken cool down for about 10-15 minutes. You can smoke the chicken at this point if you want it to have a nice smoky aroma. 

Heat the 1 tbsp of oil or butter in a pan and then lightly fry the chicken just to give it a good colour. This step is optional.

Serve with accompaniments of your choice. You can even shred the chicken and use it in salads, wraps, with rice and so on.

I have a question appa.. Can i steam it in momo dish instead of frying pan.. ?

I do not have nor used a momo dish before so am not sure.

Can I follow the same instructions to steam fish? How long should I keep them to steam?

Yes you can, about 10-15 minutes depending on the size of the fish.

I wanted to know that if we are not going to smoke the chicken even then should we wait for 10-15 min so that the chicken will cool down before frying the chicken or we can fry it as soon as we take it out of the steamer?

Hi, yes you can fry it right away if you like.

I have tried this recipe 3,4 times and every tum I just love it. Usually I do it with 4chicken quarters but this time I thought to freeze some marinated chicken so I used 8 quarters. I steamed 2 pieces last night and I think I might have put in a lot of ginger and garlic cuz I could feel a very strong ginger and garlic flavor. Is there any way I can some how reduce the intensity of ginger garlic flavor in the remaining marinated chicken pieces which I still haven't put in freezer?

Hi, thank you! You could marinate a second batch of chicken without any ginger or garlic, then mix it in with the previous lot just to balance out the flavour.
