Lab-e-Shireen is a rich Pakistani 'custard and fruit' based dessert that is both highly refreshing and incredibly delicious. It is most enjoyable as a refresher during the Holy month of Ramadhan.

1 tin
mix fruit cocktail, drained
(or approx 2 cups of chopped mixed fruit of your choice)
1 pack
green jelly, prepare and allow to set
1 pack
red jelly, prepare and allow to set
1 cup
liquid heavy cream
whole milk
1/2 cup
(or to taste)
2 heaped tbsp.
cornflour or custard powder
1/4 cup
crushed pistachios
1/4 cup
almonds, chopped or roughly crushed
2 tbsp
pep or rose sherbat
few drops red food colouring
handful of coloured or plain vermicelli, boiled and drained

First, prepare the custard. Mix the custard powder separately in a small bowl with about 2 tbsp. of milk. Pour the remainder of the 500ml in a pan with the sugar and a few drops of red food colouring (to turn the custard pink) and bring it to almost boiling point then lower the heat. Add the custard mixture and keep stirring until the mixture thickens (for about 2-3 minutes) then turn off the heat.

If the custard feels lumpy, pass the mixture through a sieve so it smooths out.

Set the custard aside to cool. Once the custard is at room temperature, add the liquid cream and rose sherbat and mix well. Then add the drained fruit cocktail, crushed nuts and boiled vermicelli. Mix again to ensure everything is well combined. Pour into a serving dish and garnish the top with pieces of jelly and some almond and pistachio flakes.

Cover and refrigerate until well chilled before serving.

Hi fauzia. I love all your recipes. I wanted to know, you mention here about boil the vermicelli in water or in milk?and vermicelli is sawaiyan only right? Which we use in sheer khurma n all ?

AOA.. can u plz tell me that which will work gud cornflour or custard?? As 1 ov my friend use to make wid cornflour..then plz tell me procedurw if we r using cornflour.
2nd ques: IN CASE of cutrd i hve 2 flvrs pistacho and banana.. which will tazte well??

I prefer custard over cornflour because custard has a better flavour. But I normally use either plain vanilla custard or strawberry. Pistachio or banana might change the way this dessert is supposed to taste. If you are using cornflour, just use the same amount and proceed with the recipe exactly the same way.

Fauzia can i wipe the cream alittle and then add to the custard to give it a little thick texture?

Hello. I have tried alot of ur recipes and they all perfect I trust them alot...... I want to make this for eid. What do you mean by liquid heavy cream and whole milk . And by rose shebet do you mean rose syrup.... reply soon pliz wana make for eid.....

Hi, thank you. Liquid heavy cream means heavy cream like whipping cream or double cream but do not whip it leave it in liquid form. Whole milk is full fat milk or heavy milk. And yes rose sherbet is rose syrup.

Pls reply me soon as i hve to serve to my guests today for iftar but its not set still so idk how it will be after chilling it as i hve never tried lab e shireen its my first time and it looks yummy but its not set so idk how its served
