Muffins certainly do not always need to be sweet!  These incredible moist and fluffy muffins make for something deliciously different and are guaranteed to be a hit with all who try them.  They are perfect after-school healthy snack for kids but are great for adults too.

They freeze beautifully so these can be made in larger batches and frozen in ziploc bags.  Simply warm them up and serve as and when needed.  You can mix and match the ingredients, using up whatever you have on hand.  Perfect addition to lunch boxes!

Ingredients
2 cups
self-rising flour
1/2 cup
boiled shredded chicken
(any leftover chicken will do)
1/2 cup
grated cheese
(I like to mix cheddar with mozzarella)
1/2 cup
mixture of chopped capsicum, onion and sweet corn
(you can mix chopped mushrooms or grated carrots too)
1 tbsp.
chopped coriander
1
chopped green chilli or chili flakes
(optional for extra spice)
pinch of salt and pepper
1/2 cup
melted butter
(125 gm)
1 egg
lightly beaten
1 cup
milk
Instructions

You can make your own self-rising flour by adding 1 1/2 tsp. baking powder and a pinch of salt to EACH cup of plain/all purpose flour.

Preheat the oven to 180C.

Grease the cups of your muffin or cupcake pan.

In a large bowl, sift/sieve the flour, then add all the dry ingredients (chicken, cheese, capsicum, onion, sweet corn, coriander, chilli, salt and pepper etc). Stir them together so they are evenly distributed in the flour.

In a spearate jug, add the three liquid ingredients (milk, butter and egg).  Lightly whisk with a fork to combine.  Now pour the liquid ingredients into the bowl that has the dry ingredients and stir until just combined.  Do NOT over-mix as this will make the muffins chewy.

Spoon the batter into the muffin cups and bake for 15 minutes or until skewer stuck in the center comes out clean.

Remove the pan and allow them to cool slightly.

Enjoy!  :)

Salaams Fauzia bai,

Is it ok if I use oil instead of butter in this recipie? If yes, how much oil should I put?

Thanks

Fauzia's Kitchen Fun's picture

W/Salaam, you can use an odourless oil yes..same amount.

Looks delish

Assalamualaikum Sister
Thank you for sharing your wonderful recipes. I have tried some of them and they have turned out very nice.
The savoury muffins recipe looks delicious. Can this recipe be used to make one big loaf or cake? If yes, what size pan should be used?
Thank you
Nargis.

Hi can i mix the better and keep in the fridge for next day morning use?

Fauzia's Kitchen Fun's picture

Hi, Just keep the dry ingredients separate and the liquid ones separate. Then you just have to mix and bake in the morning. But make sure you get everything out of the fridge at least half an hour beforehand to make sure the ingredients are not cold.

Is this dish can be fry instead of baking?

Fauzia's Kitchen Fun's picture

No, best to bake this. Frying will not give the same results.

Assalamualaikum. Can this recipe be used to make a loaf or cake? If yes, which pan size should be used?
Thank you.

Fauzia's Kitchen Fun's picture

W/Salaam, have never tried that actually.

These Look reallyyyy yummyy...ll try these soon...:)

assalamwailkum , fauzia can I use margarine instead of butter

Fauzia's Kitchen Fun's picture

W/Salaam, yes that is fine.

how do i thaw it ? I have right now 5 of them in freezer. How long i can keep them in freezer. ?

Fauzia's Kitchen Fun's picture

Wrap them in tissue and microwave for 30 seconds to a minute or until warmed through. They will keep for up to a month frozen, make sure they are wrapped well in cling film or in a freezer bag.

hey Fauzia... two questions please.... first - how many muffins does this recipe make? secondly if I were to make them in larger quantities, how do I alter the recipe?

Also your pizza rolls... its awesome awesome recipe, have made them twice... but it only makes I think 10or 12... again if I were to make them in larger quantities, how do I alter the recipe? is it as simple as doubling the recipe or shall I make them in two separate batches? (more hard work).. please let me know...

by the way you are a total tastebud genious :)

Fauzia's Kitchen Fun's picture

Hi and thanks Sam. This makes 12 (see it's written under the pic, right hand corner). And yes you can just double the pizza roll recipe and make it in one large batch.

Thanks a lot for another great recipe....made this for my family & some friends... they all loved it. Your website is one of my favorite websites that I always go for recipes & not scared to try... as they come out very well all the time. Thanks again :)

wonderful recipes !!!!
yummy yummy!!!

Hi Fauzia,
can we use semolina or wheat floor instead of plain flour for this?

Fauzia's Kitchen Fun's picture

Hi, have never tried with either of those substitutions and am not sure how the results would be. Do let me know if you decide to try them.

Assalamualaikum Sister Fauzia,
Can coconut milk be used instead of regular milk?
Thanks.

Fauzia's Kitchen Fun's picture

W/Salaam, have not tried this with coconut milk, sorry!

Assalamoalaikum fauzia
I really love ur recipes im making savory muffins but its taking more time its not done in 15 min nor in extra 7 min still its in the oven but it seems to be done in 3-4 min.
But why it took long.

Fauzia's Kitchen Fun's picture

W/Salaam, by not done, do you mean you checked with a toothpick and it came out wet? Or do you mean yours did not colour on the top. Also, did you preheat the oven before baking?

Salaam, can we semi cook the chicken and then use it in the recipe instead of using boiled??

Fauzia's Kitchen Fun's picture

W/Salaam, yes you can.

can we do stove oven baking to make muffins

Fauzia's Kitchen Fun's picture

You can try, I personally have not yet tried baking these on the stove-top but it should be ok.

Fauzia's Kitchen Fun's picture

Hi, thanks for the lovely feedback! Yes you can warm them up the next day in the oven, make sure it is preheated and put them in just for a few minute to prevent them from drying out.

Thanku dear ur all recipes r v good

Thank you for the recipes, your website is my most frequent go-to for recipe ideas, stay blessed, you have bought cooking revolution in my kitchen. 1 question: can I skip the cheese in this recipe altogether or use any other substitute coz I don't have it at the moment? I understand I'll be compromising on the taste but I just can't wait...

Fauzia's Kitchen Fun's picture

Thank you so much! Yes you can omit the cheese, no need to substitute it just leave it out. :)

Salaam.
A question plz..... can dis batter/mixture be used in the sandwich maker? As in sandwich maker cakes?

Fauzia's Kitchen Fun's picture

W/Salaam, have actually never tried that. Let me know if you do and how it turns out. :)

Hi Fauzia, lovely recipes, I tried the biscuit pudding and honeycomb bread, they were awesome!! I have baked the savoury muffins but it did not colour on top and it's still a little wet after cooking for 25 min, can I fry them now so this does not get wasted or what can I do?

Fauzia's Kitchen Fun's picture

Hi, sounds like there could be an issue with the oven baking, less heat from the top than from the sides. Not sure if frying them would work but you could try toasting them in an oven toaster.

Salam alikum fauzia ur just awesome!! I wanted to ask how to bake these whether in a gas based oven or electric ? Which one do u use :) thanks a lot ur the master of innovations in food keep it up !!

Fauzia's Kitchen Fun's picture

W/Salaam, I use an electric oven. Thanks!
