Spicy Baked Beans
You can jazz up baked beans from a can and give them a flavour boost with a little bit of extra effort. Serve them as you normally would, for breakfast, over bread, with mashed potatoes, accompanying fish and chips, etc.
Heat the oil in a pan and add the chopped onion, fry on medium heat until they soften. Stir in the garlic and then sprinkle the chilli flakes, cumin and coriander powder. Let them cook together for a few seconds, then add in the baked beans, chilli sauce, pinch of salt and pepper and a small splash of water. Allow to simmer for a couple of minutes for flavours to infuse. Taste and adjust seasoning. Stir in the fresh coriander or parsley and serve.
