Peri Bites/Poppers

Makes 10-14 poppers

Delicious spicy jalapenos filled with chicken, cheese and potato, coated in breadcrumbs for a fantastic crispy crunchy finish. The filling for these can be any myriad of combinations, whatever you want can work beautifully...cream cheese, beef/lamb mince, mashed potatoes...etc. An amazing appetiser! 

Ingredients
10-14
jalapenos, or any huge chilies
1
chicken breast, cut into cubes
(cooked and shredded)
2 tbsp
mayonnaise
2 tbsp
shredded cheddar or mozzarella
pinch of salt and peppe
1 tsp
lemon juice
1
small potato (cubed and boiled, then mashed
Extra Ingredients
1/2 cup
flour
(mixed with a pinch of salt and pepper)
2
eggs
(beaten with 2 tsp water)
1/2 cup
breadcrumbs
Instructions 

Wash and slit open the jalapenos, or any huge chilies. Remove the strings and seeds from inside carefully, then rinse them out and set aside.

Mix the cooked shredded chicken with the rest of the filling ingredients and stir until combined. Stuff this mixture carefully into the chillies. Put the stuffed poppers on a plate and pop them into the freezer for half an hour.

Prepare 3 plates. One with the flour seasoned with some salt and pepper, second with the beaten eggs, and third with the breadcrumbs.

Dip the slightly frozen chilies first in the flour, then the egg, then the crumbs. You can repeat dipping in egg and crumbs for a thicker and crispier coating. Fry on medium heat until golden and crisp. Remove on to some kitchen towels to drain excess oil. Serve with ketchup, chili sauce or any dip of your choice.

Slit from the side so the shape is maintained.

AOA. Can i make and freeze them for a longer time and fry after a day or two?

hi fouzia!!! want to say thank u for such a wonderful receipe,,i tried to find peri peri bites receipes in past but couldn't,,this one taste very close to nando's peri bites,,this time i tried same as above ,,but for the next time i am thinking to deduct patatoes,as i didn't like the taste of it,and will add cream cheese in it,,want to know ur opinion? thanks once again:)stay blessed!!

W/Salaam, make sure the peppers are at room temperature when frying, when fried cold they tend to absorb more oil. Also keep the heat on medium, not too high and not too low.

If you were to bake this what temperature would it be and for how long

Never tried baking these but I would estimate around 180 C for about 15 minutes or until golden and crisp.

I have a doubt that how much does 1 chicken breast weighs?

W/Salaam, depends. If the chicken is big the breast could weigh up to 300gm or more. But an average one would be around 200-250gm.

W/Salaam, thank you so much! You can serve this with ketchup or mix mayonnaise with ketchup and add spice or hot sauce to it. Please type peri peri in the search bar to get my nandos style peri peri chicken recipe...you can make the sauce in that recipe and then cook it down and use as a dip. :)

HI FAUZIA CAN WE USE COTTAGE CHEESE INSTEAD OF CHEDDAR OR MOZERALLA CHEESE?
