Yes, same awesome cheesecake...different home-made topping!! :D

You can even make these in small individual bowls and serve individually instead of having to slice one big cheesecake.

Chocolate Topping
Passion Fruit Topping
Mango Topping

8 oz.
cream cheese, at room temperature
(1 package, about 250gm)
8 oz.
COLD whipping cream
(1 cup)
1 tsp.
vanilla essence
1/4 cup
grinded/caster sugar
1 tsp.
lemon juice
Digestive biscuits
(about 13-15 biscuits)
2 tbsp.
cocoa powder
2 tbsp.
powdered sugar
melted butter
Ingredients for Strawberry Sauce
2 cups
fresh or unsweetened frozen strawberries
1/3 cup
1-2 tsp.
1/3 cup
red food coloring

Make sure you use a GOOD QUALITY thick cream cheese, like Philadelphia or DairyBelle. Spreads will not work for this recipe as they are too light in consistency.

For Cheesecake

Crush the digestives either in a plastic bag with a rolling pin or in a processor. Then add the cocoa powder and sugar, pulse or mix until combined. Add the melted butter and mix well.

Press in an 8" spring form pan. Cover and chill the base in the refrigerator whilst you prepare the cheesecake filling.

Whip the cream until peaks form. Cover and refrigerate.

Add the sugar and lemon juice to the cream cheese. Mix well until the cream cheese no longer has any lumps and the sugar is completely dissolved. Do not rush past this stage, take your time. :)

Once the cream cheese is smooth smooth SMOOTH, get the whipped cream from the refrigerator and add it into the cream cheese. Add the vanilla. Now, using a whisk, mix the two until the mixture is smooth, stiff and thick. You can use an electric or hand mixer at this stage but be careful NOT to over-beat it as the whipping cream might curdle if you do that.

Pour the mixture onto the prepared crust, cover with cling film and allow to set, at least 5 hours but preferably overnight.

Now you can prepare the sauce.

For Strawberry Sauce

Wash and hull fresh strawberries. If using frozen strawberries, thaw before using. Chop the strawberries into small pieces. Reserve a third of the chopped strawberries.

Mix water and cornstarch until dissolved, pour into a pan and add the strawberries and sugar. Simmer until the sauce thickens. Pour the sauce into a blender and blend until smooth, then pour it back into the pan.

Add the reserved third of chopped strawberries and simmer for another minute. Finally add the vanilla essence and some drops of red food coloring if you like.

Refrigerate until chilled before serving over your dessert.

Enjoy! :)

Fauzia's Kitchen Fun's picture

I notice there is no gelatin in your recipe. will the cheesecake set without it?

Fauzia's Kitchen Fun's picture

As you can see from the pic, it has set PERFECTLY. :)

Hey dear.... Your recipes are mindblowing mashallah... Finger licking gud... Have tried many n alhamdulillah ol went hit;)
I wana try this cheese cake... Wanted to knw.. Will almarai cream cheese work???

thanks dear!!! i will try to find the above brand in Rawalpindi ,,because i want to make a cake ,,lets see :)

Hi Fouzia ,, ur recepies r awesome :) ,, yar I just want to know can I use cream cheese of Puck ,, available in bottle!!!

Fauzia's Kitchen Fun's picture

Hi and thank you! Puck is a little light in consistency so the cheesecake may not set as well as other brands like philadelphia. You can use it but instead of making a proper full cake, make small individual glass servings so that you don't have to slice when serving.

What are the cup meausrments and what can i use as an alternative to cornstarch?

Fauzia's Kitchen Fun's picture

Here are the measurements. My Measurements

Cornstarch is the same as cornflour.

i used Philadelphia fat free cream cheese because could not find the regular one. after applying the whipping cream and cream cheese mixture on the crust, i left it over night in the fridge to set. however the cake (white part) turned out to be little runny and not set as cheese cakes usually are. Also after i mixed together cream cheese and whipping cream, whisked it for around 5-7 minutes with an electric mixer on normal speed. Didn't mix for too long to avoid the curdling. Is it because of the fat free cream cheese or is it something else?

Fauzia's Kitchen Fun's picture

Hi, yes fat-free will not give the same results as full-fat. Do try it again with the full fat version please or add a bit of gelatine powder (about 1 tbsp) if you are using the fat-free again and let me know how it turns out.

Thanks a lot..will definitely try again :)

Also can you please mention what would be the equivalent measurement of 8 oz cream cheese in cups?

Fauzia's Kitchen Fun's picture

1 cup.

For the crust, what are some names of buscuits you recommend?

Fauzia's Kitchen Fun's picture

I would go with digestives, that is the main one that I prefer. You can also use graham crackers or oreos.

Hi what if you dont have corn starch but corn flour?

What can i used as a replacment...gelatin/jelly?

Fauzia's Kitchen Fun's picture

Hi, the two are actually the same, just that different countries call them differently. :)

Hi Fauzia. I tried making your strawberry cheesecake recipe. Looks good, tastes amazinggggg, only problem is the consistency is a bit runny. I used Kiri cream cheese, and President whipping cream (35.1% fat). I cannot understand why the cheesecake didn't set right (I couldn't find Philadelphia cream cheese at the market). Please can you tell me how thick the whipping cream should be because I feel the whipped cream made the cheese a little runny.

Fauzia's Kitchen Fun's picture

Kiri cream cheese is a bit lighter in consistency than Philadelphia, that may have had something to do with it not being firm. You can try adding 1 tbsp or so of gelatin to help firm it up next time. The whipping cream should be whipped first to soft peaks, then added to the whipped cream cheese and the two need to be whipped together until firm. Over whipping the cream makes it runny, that may also be something else that you did wrong. Hope the next attempt is better! :)

Thanks for your reply, really appreciate your help. Another problem I faced was regarding the crust. When I took the cheesecake out of the refrigerator and tried to slice it, it wouldn't cut past the crust because it was too hard. What should I do about the crust?

Fauzia's Kitchen Fun's picture

I think this depends on the digestive biscuits used. Try reducing the amount of butter and see if that improves it.

assalaamwalaikum, i tried this cheese was very yummy but it didnt set.i was lite philadelphia cream cheese.i wanted to know whether white cheese and cream cheese is the same.pls let me know .thank u

Fauzia's Kitchen Fun's picture

W/Salaam, I use the block cheese which is more solid, not the spreadable ones.

Hi fauzia, I have bought philadelpedia spreadable cheese bymistake, now wht should I do to maintain cake consistency ?

Fauzia's Kitchen Fun's picture

Hmm, maybe try adding about 1 tbsp gelatin powder in the recipe to help stabilise everything.

Salaams, I can't find philadelphia block cheese where I live, only the spreadable one. will it do? and some people say gelatin gives a terrible smell. is it true?I have never used it. please reply soon.jzk

Fauzia's Kitchen Fun's picture

W/Salaam, spreadable will work but the cheesecake will not set, it will be soft. You can make it in individual bowls so you won't need to slice it up on serving. Gelatin comes in many different brands, have never used any that smells terrible.

Salaam fauzia . I want to make oreo cheesecake . How should I go about it ?

Fauzia's Kitchen Fun's picture

W/Salaam, crush the oreo cookies and fold them into the cream mixture before pouring the cheesecake into your pan. You can even use crushed oreos for the base in place of digestives or graham crackers.

Hi Fauzia,
If using Oreo biscuits for the base, do we still need to add cocoa powder, butter and sugar to the biscuit base?

Fauzia's Kitchen Fun's picture

Hi, you can omit the sugar and cocoa powder but you will still need the butter to hold everything together.

made the cheese cake using almarai cream cheese.....and alhamdulillah the result was excellent!!
thank you for the wonderful recipes!!!

Hi fauzia, I want to ask is cheese cream frosting will work for it or it is different from cheese cream?

Fauzia's Kitchen Fun's picture

Hi, no, frosting will not work for this. You need the actual cream cheese.

Hi fauzia I tried making Oreo cheese cake with the above recipe and it turned out really nice.

Assalamualikum Fauzia.. im planning to make this in shot glasses but for 30 people. can u pls help me with the exact measure of ingredients of the cheesecake only not the crust.. jazakallah khair :D

Fauzia's Kitchen Fun's picture

W/Salaam, as mentioned under the pic (right hand side) this recipe serves 8. So either triple the amounts and make smaller servings or make 4 times and have some extra. :)

Heyyyy... Can u please guide me here.. I just wanna knw can we use the powdered whipping cream. Actually where i live in pakistan whipping cream is hard to find. Somtimes "wipped cream" in cans is available but that too ocasionally.. Only by luck!!!!! So please tell me can i use the powdered one and will canned one be fine used too... Lots of prayers..

Fauzia's Kitchen Fun's picture

Hi, am really not sure that it would work as well as liquid whipping cream that is then whipped from scratch. You could try, but maybe instead of making a full cheesecake, make them in individual servings/bowls so that if it does not set, they will still look amazing and can be had from the bowls.

Hi can i bake this instead of set in fridge?

Fauzia's Kitchen Fun's picture

Hi, no the baked versions need eggs.

I want to make the Strawberry Sauce topping to top 12 cheesecake cupcakes. Do you suggest I halve the sauce recipe or make it as it is?

Fauzia's Kitchen Fun's picture

W/Salaam, make the full recipe. :)

I dnt hv spring foam pan.wht should i do.dnt want to make it in seperate glasses..plz reply

Fauzia's Kitchen Fun's picture

It would be difficult to turn out the cheesecake without ruining it if you use a pan that is enclosed. Do you have a loose-bottom pan?

Hi Fauzia,
Should we add gelatin to this recipe just to be on the safe side? If so, how much? Your recipes are my go-to recipes when I'm in doubt of trying another recipe. They are always amazing and on the dot.
