Servings
two 8" cakes or 24 cupcakes

This lovely cake is most delicious, but more than that, it is one of the easiest cakes to prepare!

Ingredients for Cake
2 cups
all-purpose flour
2 cups
sugar
3/4 cup
unsweetened cocoa powder
1 tsp.
baking powder
2 tsp.
baking soda
pinch of salt
1 cup
milk
1/2 cup
vegetable oil
(or melted butter)
1 tsp.
pure vanilla extract or essence
1 cup
HOT brewed coffee
(1 tsp. of instant coffee mixed in a 1 cup of hot water)
2
eggs
Ingredients for Ganache
8 oz.
semi-sweet chocolate, cut into small pieces
(227gm)
3/4 cup
whipping cream
(180ml)
1 tbsp.
unsalted butter
(15gm)
Instructions

Preheat oven to 175 degrees Centigrade and grease and flour two 8 inch cake pan. In a bowl, mix together all the dry ingredients.

Create a well in the center and add all the rest of the ingredients except coffee. Mix well until combined and then add the hot coffee. Mix once again.

Pour into greased pans and bake in the middle rack in the oven for approximately 45 minutes or until a skewer comes out just clean. Cool on a wire rack.

Slice each cake into two slices, then layer using buttercream frosting, and cover the cake with melted chocolate or ganache. I sprinkled crushed pistachios and almonds on top. For the frosting used in the layers, I used THIS buttercream frosting with some cocoa added into it.

For the Ganache

Place the chopped chocolate in a heatproof bowl. Set aside. Heat the cream and butter in a medium sized saucepan over medium heat. Bring just to a boil. Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth, then just pour or drizzle it over the cake and let it fall on its own down the sides of the cake.

Enjoy! :)

Made this cake and OMG it was soooooo yummy
Thank u fauzia for this easy wonderful recipe :)

sister fauzia,i don't want the cake to be too sweet...kindly advise me how much sugar i should use for medium sweetness..thanx

Fauzia's Kitchen Fun's picture

Reduce the sugar to 1 and a half cups Azka.

Lovely cake, incase u don't have whipping cream in hand is there any alternative?

Can i skip the hot cofee.

Fauzia's Kitchen Fun's picture

Yes Nazia, you can use plain hot water. But I find the coffee adds depth to the chocolate flavour of the cake.

Hi, For the ganache ingredients, can i use double cream instead of whipping cream as i couldnt find whipping cream in tescos lol

Fauzia's Kitchen Fun's picture

Hi, yes you can use double cream, no need to double the amount, it will work just as well as whipping cream only that whipping cream whips up lighter.

thankyou :)

I made the cake and it was so delicious, would advise whoever intends on making it that definitely use greaseproof paper because my cake stuck to the bottom even though I greased the cake tin, it was really really nice, if I could upload a picture here I would, just one quick question, how would I make the gancache more thicker?

For thick ganache the chocolate should be double the quantity of cream n if it gets too thick put some more cream

how many serving with this recipe ?

Fauzia's Kitchen Fun's picture

Hard to say with cakes, approximately 10-16 ppl depending on how you cut the slices.

what can be used instead of eggs?

eggs arent used in this recipe

Hi, pls can I use an electric mixer for mixing and can dis recipe be used For cupcakes as well... JZK

Fauzia's Kitchen Fun's picture

Yes you can use a mixer, but be careful not to over-mix. Just until the batter is combined. And yes you can make cupcakes with the batter.

Salam, can i know for how much mins can i bake the cake if i dont want to bake it in two different pans??

Fauzia's Kitchen Fun's picture

About 40 minutes. Check with a toothpick at that time, if it comes out clean it's done, if not, bake it a little longer.

thanks..and baking time should be 175 degree only?

Fauzia's Kitchen Fun's picture

Yes, same temperature.

assalaam fauzia...firstly,thnks for all de wonderful recipes...n secondly, congrats on ur webpage:D...thirdly comes my query,i wud love to bake this cake for my hubby's bday, wich is coming up soon...wud lyk to noe if i can use CADBURY"S drinking chocolate instead of cocoa pwdr?...thanks a lot...tc

Fauzia's Kitchen Fun's picture

W/Salaam and thank you! Drinking chocolate is sweet unlike cocoa powder, so the results may vary. I would recommend that you get some cocoa for best results. Otherwise reduce the sugar in the recipe slightly and use the DC but the colour of the cake will not be as dark as the one that was made using cocoa powder.

Salam sis fauzia!

I have only a 10 inch pan.. So how do I increase the ingredient?

I dont want the height of the cake to reduCe, so pls help me :)

Fauzia's Kitchen Fun's picture

W/Salaam, is the pan deep enough to accommodate the extra batter? If so make 1 and a half of the amounts of everything. Like instead of 2 cups flour, use 3 cups flour, instead of 2 cups sugar use 3 etc. The baking time will be longer too though. Otherwise bake the same recipe twice, you will get 2 layers which you can stack one on top of the other with frosting in the middle.

Salamalaykum!

I came upon your blog, some days ago - via the bubble pizza page - and ever since have been itching to give your yummy recipes a go. I browsed around, subscribed to your updates, and waited about to get all my ingredients together to give what I wanted a try. Amidst the way too many things that I wished to give a go, I just randomly gave this choc cake a whirl, and BOY was it a hit. It was for my brother and bhabi's 2nd Nikkahversary, and we all LOVED it, Alhumdulillah. I used the Betty Crocker Choc Frosting from the container cos I was short on time, but I'm definitely gonna give the mouse filling a go next time insha'Allah.

My sister was asking, how are people so generous with their recipes. They just share without getting anything out of it? So I said, they get immense gratitude and duas - and therefore, here are my heartfelt duas sent your way... jazakAllah khayr for sharing, and for your brilliant blog. May your ramadhan be abundantly blessed and smooth insha'Allah - Ameen!

Best wishes; fiamaanAllah :)

W/Salaam and aww that was the sweetest post ever, thank you so much! Ameen to your beautiful duas. xo

You're most deserving of it... and on re-reading what I'd written in my nocturnal state, I couldn't help but giggle at my typo *mouse filling*

Guess you knew what I meant anyhoo ;)

To many more wonderful shares from you, and tries from us lot visiting your pages, insha'Allah - Ameen!

Fauzia's Kitchen Fun's picture

Click on 'My Measurements', posted in the above comment.

Fauzia's Kitchen Fun's picture

Use about 50 gm of cocoa powder. That would be half the amount mentioned in the recipe. :)

do we use regular sugar or powdered sugar in the cake?

Fauzia's Kitchen Fun's picture

Regular sugar.

Fauzia's Kitchen Fun's picture

W/Salaam, LIQUID milk, and all the ingredients are added into the flour together and mixed, coffee last. Just as described in the recipe instructions.

i love this recipe

Hey
Can I leave vanilla Essence?! Or put pineapple instead ?
Would it matter?

Fauzia's Kitchen Fun's picture

Hi. Vanilla adds a good flavour to the cake. You can use pineapple, it will taste fruity.

fauzia sister can i use sunflowr oil insted of vegitble oil? REP ME SOON PLS

Fauzia's Kitchen Fun's picture

If the oil doesn't have any funny smell and is odourless, yes you can.

Hey, can I use just plain flour rather than the all purpose flour?

Fauzia's Kitchen Fun's picture

Hi, the two are the same thing.
