These fries/chips are a speciality in most parts of Kenya. The recipe takes your normal average plate of fries to a whole other level. Saucy and spicy, these masala fries work beautifully with bbq dishes or even as a snack on their own!

Ingredients
1 kg
potatoes, peeled and cut into strips/fries
(rinse the potato strips a couple of times to get rid of excess starch)
2 tbsp
margarine/butter
1/2 tsp
spanish paprika OR tandoori masala
1 tsp
salt
(or to taste)
2-3 tbsp
ketchup/tomato sauce
1 tbsp
tomato puree/paste
1 tsp
chilli powder
(or to taste)
1/4 tsp
garlic paste
1/4 tsp
cumin powder
(optional)
1/4 tsp
turmeric powder
(optional)
1
chopped green chillies
juice of half a lemon
chopped coriander for garnishing
oil for deep frying
Instructions

Fry the chips, twice. (Fry them the first time, then drain them from the oil, re-heat the oil and fry them again to make them extra crispy)

In a pan, heat the margarine/butter. When it melts, turn off the heat, add the spanish paprika or tandoori masala, salt, red chilli powder, garlic paste, tomato paste/puree and ketchup/tomato sauce (or chilli sauce if you prefer them extra hot).

Sometimes I like to add a little bit of any other spice like cumin powder or turmeric to play around with the flavour, or I add chopped chillies or red chilli flakes for extra heat. You can adjust according to your taste and preference.

Turn on the heat again and cook these ingredients until they are well combined and starting to thicken (you can add a splash of water if you prefer your chips saucy). Turn the heat to low, and throw in your chips. Toss them around so that the sauce/masala covers them properly. Turn off the heat and squeeze in half a lemon (or more if you like lemons) and garnish with coriander. And you're done!!

Enjoy! :)

Can I just use Ketchup instead of the puree?
Won't it get too tangy?

Fauzia's Kitchen Fun's picture

It never gets tangy for me but sure if you want to use just ketchup you can. :)

Assalaamu'alaikum, I live in Ajax Ontario, can you please tell me where i can get spanish paprika? I've been trying to search for it for a while, I cant find it anywhere.

W/Salaam, you can use just regular paprika powder. It should be available at any supermarket in the spice isles. :)

Just made this and it turned out perfect<3 This is my first time visiting this blog and I will definitely be a frequent reader. Great Job!

Just made mine and they turned out perfect! I was craving for them badly yet I am not in Kenya where you can easily get them in a fast food! Thanks a lot

I do not mean to exaggerate, but woman as far as am concerned you are doing God's work. This is my view. Fauzia let me tell you I would be starving if it was not for you, because I have to cook for myself and like many men sijui kupika. Barikiwa madam, uishi miaka na miaka, upate watoto kibao, bwanako azidi kukupenda zaidi na usiache hii huduma ya kutusaidia tuweze kupika.
