Khari Pooris

Farsi Khari pooris or puris, one of my favourite crispy savoury/salty snack. They are a flavourful and spicier version of the more famous namak paray.

1 1/2 cups
all purpose flour
2 tbsp
1 tbsp
1 tsp
1 tsp
cumin seeds
(sometimes I mix some roughly ground cumin seeds with the whole ones)
1 tsp
ajwain/carom seeds
2-4 tbsp
sesame seeds
1 tsp
black pepper, roughly crushed
1 tsp
chilli powder
1/4 tsp
turmeric powder

Mix all the dry ingredients then add the oil and margarine and rub them in until you have the consistency of breadcrumbs. Then gradually add water and knead into a firm but smooth dough, not as soft as the dough for making buns. Cover and let it rest for 15 minutes. Then divide in half and roll each half out. Prick the dough all over with a fork or make tiny cuts using the tip of a knife to prevent them from swelling when frying. Cut into whatever shapes you want, rounds or diamonds. Fry on medium heat until golden brown and crispy. Once cooled, store them in an airtight container.

slm, does the water shud be cold or warm?

W/Salaam, room temperature water is fine, you can warm it if you like though.

When it says flour, it is always plain flour. Anything else and I normally mention it in the recipe.

Half a cup.

You say farsi puris with black pepper,cumin seeds and sesame seeds. You haven't mentioned sesame seeds in the list of ingredients given, so how much should be added?

Up to a week in an airtight container.

Hi can i use olive oil in this?

Works best with veg oil.

Can i replace margarine with oil ?

I think the margarine in this recipe helps with the texture of the pooris but if you do not have it then you can use extra oil.
