Fried Corn Kernels

I first has this yummy snack as a young girl when I had spent my holiday on a farm in Moshi, Tanzania. The amazing aroma of freshly fried corn is difficult to resist! And if you’re lucky enough to have the corn from freshly harvested stalks, then you are in food-bliss!! Kids especially LOVE this as a snack. 

Ingredients

  • 2-4 ears of corn/maize OR 1-2 cans of drained corn (even sweetcorn will work)
  • knob of butter
  • salt to taste
  • seasoning of choice (optional)

Instructions

Remove all the kernels off the cobs. If the corn/maize is fresh (you can test this by pressing a kernel, if it is fresh it will splash out a milky liquid right away), then proceed to the next step. If the corn you have is not very fresh/young, then give the kernels a boil for about 15 minutes and then drain the water completely before moving to the next step. For corn kernels from a can, you do not need to pre-boil them.

Heat a knob of butter in a pan. Once melted, add the corn and keep the heat on low, stir fry the kernels until they start turning golden and translucent. Season to your taste by adding salt, lemon, chilli powder, pepper…etc…whatever you like! Serve warm and enjoy!! 🙂
