Chicken Fajitas

Fajitas are delicious and spicy Mexican style wraps filled with either beef or chicken strips along with peppers and onions.

Ingredients for Chicken Marinade
500gm
boneless chicken breast
(sliced and cut into strips)
1 tbsp.
oil
1 tsp.
garlic paste
1/2 tsp.
ginger paste
1 tsp.
salt
1 tsp.
black pepper
1/2 tsp.
oregano
1 tsp.
cumin powder
1 tsp.
red chilli powder
1 tsp.
spanish paprika
juice of 1 lemon/lime
(2 tbsp.)
Other Ingredients
8
tortillas or wraps
2 tbsp.
oil
1
red bell pepper
( sliced)
1
green bell pepper
(sliced)
1
small yellow bell pepper
(sliced)
1
large onion
(sliced)
2
red chillies
(chopped)
cilantro or coriander leaves
(chopped)
any sauce
(hot sauce, guacamole, salad, sour cream, salsa, chopped tomatoes etc)
1/2 tsp.
salt
Instructions 

The wraps used in fajitas are known as tortillas.

For beef fajitas, you can use this recipe for the filling:  Beef Stir-Fry 

Here is how to make fantastic chicken fajitas

Grill the marinated chicken strips on medium heat for about 3-4 minutes per side or until slightly charred. If there is any bit of the marinade leftover, do not discard. Once chicken strips are done, remove and set aside. Keep the chicken covered to retain moisture.

Add the oil in a wok. Saute the onions until tender. Add the bell pepper strips and the marinade if there was any leftover. Sprinkle salt and the chopped red chillis. Stir-fry over high heat until the bell peppers are tender and start to charr slightly around the edges. You can then return the chicken strips into the wok and mix them with the peppers, heat everything through until sizzling hot, or serve the two separately. Turn off the heat and sprinkle the cilantro. Mix and serve.

To assemble, lay a warmed tortilla wrap, apply some sauce/salad followed by the filling. Roll and serve immediately. Enjoy!

Thanks! Guacamole is a type of thick delicious spread made out of mashed and spiced up avocadoes.

what can we use instead of spanish paprika?thank you..:)

You can use a pinch of tandoori masala, paprika powder though has a different flavour. It is made from powdered capsicum/red pepper.

Fauzia, Can you please recommend a substitute to grilling. I have a stove grill but normally the chicken sticks to it too much and dries up. Even in the oven it dries up. It doesn't stay as juicy. Can you please provide a tip (for cooking or marination) that will leave the moisture in the chicken. Thanks your recipes are always amazing.

How about you simply fry the sticks in about 1-2 tbsp of oil for just 3-4 minutes per side in a non-stick pan. This will give you moist and juicy results.

W/Salaam, anywhere from 2 hours up to overnight.

Only because of your recipe, and your helpful responses to fellow/sister cooks, did it occur to me to marinate the chicken overnight. I've made fajitas many times, but the tenderness and flavor imparted by this important step is what was missing. Thank you for so improving a staple in our household.

I normally like mayonnaise mixed with some chilli sauce. I find it adds a bit of a creamy component to the wraps. If you like avocado, then that too is great.
