The ideal soup for when you're feeling under the weather or when you want something light and healthy. Makes for an excellent starter too!

pieces chicken with skin, leg and thigh
onion. sliced
carrot, roughly chopped
coriander stems
1/2 tsp
1/4 tsp
1/2 tsp
garlic paste
1/2 tsp
ginger paste
whole black peppercorn
green chili
3 cups
Other Ingredients
1 tbsp
corn flour mixed in water to form a paste
1/4 cup
sweet corn, roughly grinded
(lightly beaten)
onion, chopped fine
1 tsp
salt and pepper to taste
1 tsp
soya sauce
potato, cubed, boiled and smashed, then blended with some water or soup

Put the chicken and all the ingredients in the first list in a pan. Boil on low heat for about 15-20 minutes or until chicken is tender.

Remove chicken pieces, let them cool, peel off skin n discard it, and then shred the chicken. Sieve the soup/broth and discard the onion/carrot/coriander/peppercorn.

Melt the butter and add the chopped onions. Fry until translucent then add the shredded chicken pieces and stir for a min. Next, add the chicken soup/broth, crushed corn and mashed potato.

Bring to a simmer, add the corn flour and boil on medium low until it thickens. Season with salt and pepper.

Add the egg and quickly beat it in with a fork so it forms threads as it cooks.

Splash some soya sauce, chopped coriander or lemon juice and serve!

Looks Yummmm <3

Can I use chicken without skin?

Fauzia's Kitchen Fun's picture

Yes you can.

Fauzia's Kitchen Fun's picture

W/Salaam, the veggies are added to infuse their flavour and nutrients into the broth/soup. You can use them if you like, but normally the flavour will be already retained in the soup.

Is there a place I can buy your cook book

Fauzia's Kitchen Fun's picture

Hi, at the moment we do not have a cook book published yet, but soon inshaAllah.

Aslm alkm Fauzia, how much water should be used when mixing corn flour?Should it just be a little bit to make a thick paste?
thanks so much for sharing ur recipes with us, love your website :)

Fauzia's Kitchen Fun's picture

W/Salaam, thank you! Yes just a little bit of water to make a smooth paste. It doesn't have to be very very thick, as long as it is smooth and without lumps, it's good enough.

one more question, how many servings is this recipe?

Fauzia's Kitchen Fun's picture

Serves 4-5.

what effect does the potato have? i normally dont put it

Fauzia's Kitchen Fun's picture

It helps thicken the soup and make it even more tasty and filling.

Fauzia's Kitchen Fun's picture

Whole pepper.

Thz apa..i made it...its very nice

Slms fauzia why do we have to add the onion and carrot whilst boiling the chicken as we actually discard the veggies?can we not use these veggies.

Hi Fauzia,
I just went through your website, and have found interesting recipies. Inshallah will try.
Thnx for sharing, God bless you.

Fauzia's Kitchen Fun's picture

W/salaam, thank you. It means the stems of the coriander/dhania. Don't just chop the leaves and discard the stems, add those too and they will increase the flavour in the soup.

Fauzia's Kitchen Fun's picture

Regular red onions.

Salam ,Fauzia great recipes,i have a question ,u mentioned corriander stick, what exactly that means?

jazakallah khairan for yummy recipes,u made my food more tastier,my hubby is very impressed, alhamdulilah.

Also the onion in the recipe is regular onion or the green one?

I'm inspired by your presentations. Keep me informed.

Hi, did you add cornflour? You can easily mix some more cornflour with a bit of water and boil it in the soup until it thickens slightly to your preference.

hi fauzia i made this soup yesterday its taste was really gud but after about 5 minutes of serving the soup it turned out runny like water.i followed ur recipe but what would b the reason can u plzzz help me out of this??????????

Fauzia's Kitchen Fun's picture

W/Salaam, the stalks or stems of fresh coriander.

Hi Fouzia..Basically I,m not a kitchen person but since i liked ur pg & ur way of explanation & recipes i loved i tried chicked soup...Its taste was good but it didn,t got thick..eventhough i added corn flour..may b u maeant by sme special branded corn flour or corn starch ...& please tell me in how much water i have to add cornflour. and what if i don,t use potatoe...will it make any differrence in thickness.. Plz reply me..Allah hafiz

Fauzia's Kitchen Fun's picture

Hi and thank you. Cornflour is the same thing as cornstarch, and it's main purpose is to thicken soups and gravies. Maybe the particular brand you used is not very good, just use a bit more cornstarch. Normally you can mix 1 tsp in about 2 tbsp of water. If that doesn't thicken your soup, repeat and add until the consistency is to your liking. Potato also thickens the soup so I would not recommend that you omit it. :)

Salaam what do you mean by coriander sticks

Salam Fauzia am so delighted over ur recipes jazakillah khair...pls any substitute for coriander sticks and whole pepper?

Fauzia's Kitchen Fun's picture

W/Salaam, coriander sticks means the stems from fresh coriander. You can omit the whole pepper and use powdered instead. :)

You can serve this soup with pieces of fried Khubz (pita bread)...easy crouton !

If you are using chicken breasts, how many kg or grams should you use? Also how many does this recipe serve?

Fauzia's Kitchen Fun's picture

I would recommend for you to use chicken with bones for better flavour. The soup serves 2-4. And if you have no choice but chicken breasts, then about 250gm will do.

Hi, Am really searching for chicken Hot and Sour Soup. Would you be having this recipe?

Fauzia's Kitchen Fun's picture

Hi, sorry at the moment I do not have the recipe posted yet.

Thank you fauzia, made it last night. Tasted nice for a 1st timer coup maker :).
Can I skip onion in step 2 before adding the chicken broth? Also, how much salt will you add in while
1) boiling the chicken
2) While seasoning that is After adding the corn flour.
I think rest of the measurements are perfect so I will always go with salt according to Fauzia's kitchen's taste :). Can you please suggest salt quantity next time in your new recipes? New people like me will be obliged. Thanks! :)

Fauzia's Kitchen Fun's picture

Thanks! Normally with soups and curries it is very difficult to approximate salt as it all depends on how much the dish is simmered/evaporated and so on. You will have to taste as you go. :)

Salaam sister.can I make this with tinned sweetcorn the one I have is cream style corn.also if its OK any adjustments.thanx.

Fauzia's Kitchen Fun's picture

W/Salaam, yes you can and no changes needed. The soup will have a creamier appearance.

salaam sister, thanx for reply but made this using cream style sweetcorn.just to let u know I had to use a whole can without it looking creamy,as I made double amount using 4 pieces chicken.turn out yummy.jazahkallah .

Salam Fouzia, Can u plz upload the recipe for hot & sour soup..

Fauzia's Kitchen Fun's picture

W/Salaam, will do.
