Makes 6-8 burgers

One of my personal favourites. Nothing better than home-made fast-food!

500 gm
boneless chicken cubes
green chillies
4 tbsp
chopped coriander
(leaves with stems)
1/2 tsp.
garlic paste
1/2 tsp.
ginger paste
1/4 tsp.
tandoori masala or spanish paprika
(optional for extra flavour)
1/4 tsp.
cumin powder
1 tsp.
black pepper powder
1 tsp.
salt or to taste
juice of half a lemon
(1 tbsp.)
3 tbsp.
an egg
(beat the egg and use about 2 tbsp.)
1 tbsp.
plain flour or cornflour
(optional/if needed)

Clean and dry the pieces of chicken with kitchen towels to get rid of any excess moisture.

Add the green chillies, coriander, tandoori/paprika powder, cumin powder, garlic, ginger, lemon juice, black pepper and salt to the chicken cubes. Put them all in a processor and process until smooth. Turn the mixture out into a bowl. Add the lightly beaten half egg and breadcrumbs. Mix well. If the mixture feels sticky, sprinkle the flour and mix.

Cover and refrigerate the mixture for about an hour to make it easier to handle and shape. When ready to grill or fry the burgers, lightly grease your hands and divide the mixture into 6-8 portions depending on the size you want them. Shape them into patties. Heat a small amount of oil in a frying pan and shallow fry the patties for about 4-5 minutes per side on medium heat. Alternatively, you can grill the patties in the oven or on the bbq grill for the same amount of time.

Remove and drain any excess oil on kitchen towels (if you fried the patties). Serve on toasted burger buns with a lettuce leaf, some onion slices, sliced tomato, sliced cucumber, a slice of cheese (if you like), a touch of mayonnaise or mustard or whatever other additions you prefer.

Serve with fries and a cold drink.

Enjoy! :)

Salaam! Thanks Fauzia for the awesome recipe, will give it a try soon. I have already tried your McArabia burgers and they came out very well. Have even recommended the same to a few friends. Can't wait to try this one out. One question: you haven't said what to do with the lemon juice?

Fauzia's Kitchen Fun's picture

W/Salaam, add it in with the rest of the ingredients before processing everything. :)

Assalamoalaikum sis how can i keep these burgers moisten while frying??

Fauzia's Kitchen Fun's picture

W/Salaam, normally they should be moist as you fry them as they are covered in oil. Do not over-fry them.

Jazakillah, it turned out so good and yes!! Moist n juicy:)

assalamualaikum.wanna give a try with doubt is will the beef be cooked if i shallow fry it?and can i prepare the patties and freeze it so that i can use it instantly?if yes,how much days will it be stored good?
sorry to ask so much questions.i have tried many of ur recipes which always comes good & have never faced any eager to try all.will try to send u the tried recipes in FB.Allah hafiz..

Fauzia's Kitchen Fun's picture

W/Salaam, have actually never tried this with beef using this method, but it should be fine inshAllah. Make sure the pan is hot to sear the patty when you fry it. Once both sides are sealed you can reduce the heat and allow the patty to cook to your preference. :) Best to make these fresh, or cook and THEN freeze then wrapped well in cling film.

Hi..Please post a delicious recipe of chicken club sandwich. ..something accordance with the amazing standards of Fauzia's kitchen... :-)

Salams, can u pls tell me if I can bake these? My oven does not have the option to grill. What temperature should I bake it on and for how long? Thanks in advance!

Fauzia's Kitchen Fun's picture

W/Salaam, you can bake them yes but results are better when these are shallow fried. Preheat oven at 200 C and bake for about 10 minutes per side.

Assalamualikum I was wondering which bread do crumbs you use?

Fauzia's Kitchen Fun's picture

W/Salaam, whichever bread you have at home, white or brown, sliced or not. Just make breadcrumbs out of it and use. :)

Assalaamu alaikum, ur recipe is nice . I've doubt what processor means. How chicken get cooked

Fauzia's Kitchen Fun's picture

W/Salaam, a processor is used for grinding the meat.
