Cabbage Soup

This soup is from the 7-day detox diet...I figured one doesn't have to be on that diet to enjoy this healthy, nutritious soup!! I've modified it to make it more flavourful, one of the healthiest soups you could have! :)

small cabbage, finely sliced
big carrot, cubed
fresh tomatoes, chopped
onions, chopped
big green pepper, chopped into cubes
1/2 tsp.
ginger/garlic paste
1 tbsp.
(or less)
salt to taste
black pepper to taste
1/4 tsp.
turmeric powder
1/4 tsp.
cumin powder
1 tbsp.
lemon juice
green chillies, chopped
(you can reduce or omit as per your preference)
1 liter
1 tsp. corn flour mixed in 2 tbsp. water
fresh coriander leaves, chopped

Heat the oil in a pan, then add the onions and stir-fry them until almost golden. Add the ginger/garlic pastes followed by the carrots and capsicum/green pepper. Fry for a few minutes then add the tomatoes, green chillies and the cabbage. Add the turmeric and cumin powder, and about 1 tsp. black pepper. Then add the water and some salt.

Cover and let this simmer gently for about 20 minutes or until the veggies are tender. Add in the corn flour to help thicken the soup slightly, adjust salt and pepper, then squeeze in the lemon juice and sprinkle some fresh coriander leaves. Stir and turn off the heat. Your soup is ready to serve!


can I use this as the cabbage soup diet ?

Yes you can just be sure to have a healthy balanced diet along with the soup.

Can I use both the ginger amd garlic paste, or either?

Both, just take a quarter tsp of each and use. :)

Hi fauzia. How long will it last in the fridge? Can I freeze this soup? How long can I freeze it for?

Hi, it should be ok for up to 3-5 days in the fridge. I would not recommend freezing this soup as you will lose out on most of the nutrients that way.

Thanks:) there anyway i could avoid the texture by blending the whole soup (if that sounds reasonable)? i dont know how it would turn out but i really want to use my cabbage for a non chunky soup.

Hi, I guess that should work out ok, maybe try blending just a small portion of the soup first and see how you like it.
