This soup is from the 7-day detox diet...I figured one doesn't have to be on that diet to enjoy this healthy, nutritious soup!! I've modified it to make it more flavourful, one of the healthiest soups you could have! :)
Heat the oil in a pan, then add the onions and stir-fry them until almost golden. Add the ginger/garlic pastes followed by the carrots and capsicum/green pepper. Fry for a few minutes then add the tomatoes, green chillies and the cabbage. Add the turmeric and cumin powder, and about 1 tsp. black pepper. Then add the water and some salt.
Cover and let this simmer gently for about 20 minutes or until the veggies are tender. Add in the corn flour to help thicken the soup slightly, adjust salt and pepper, then squeeze in the lemon juice and sprinkle some fresh coriander leaves. Stir and turn off the heat. Your soup is ready to serve!
