Almond Cake

one 8" cake

This is a fluffy, delicious and super-soft cake, the almond flakes sprinkled on the top, aside from enriching the appearance and flavour of the cake, give a bit of crunch and texture to every yummy bite, and also add lots of nutrients to the lovely cake.

1 1/2 cup
self-rising flour
1 1/2 tsp.
vanilla essence
large eggs
(use 3 if you have small eggs)
1/2 cup
3/4 cup
1/2 cup
3-4 tbsp.
powdered almonds
1/2 cup
almond slices/falkes, preferably with skin

Make sure all the ingredients are at room temperature for best results.

Grind the sugar to a powder and set aside.

Sift the flour twice, then mix the powdered almonds into it.

Grease and line an 8" round pan and set aside. Preheat oven to 170 C.

Beat the butter with the sugar until light and creamy. Then add the eggs one at a time, beating well after each addition.

Now add a third of the flour and beat until combined, then add half the milk. Again beat the batter until milk is mixed in. Add another third of the flour, mix it in, and then add the remaining milk. Finally add the last of the flour and the vanilla essence. Beat just until everything is well combined.

Pour into prepared pan and sprinkle the almond flakes all over the top, patting them down with your fingertips gently to help them stick. Bake for 25-30 minutes, or until a toothpick stuck in the center comes out clean.

Remove from pan and let it cool completely before slicing. :)

It would not work well with oil, this recipe works best with butter.

Have tried some of the receipes and they turned out really well. But had one question. What does self rising flour exactly mean? Here we use 'Maida' to make cake. Is it different from self rising flour?

Hi, if you have charcoal, you can light it and place it on the top cover of the cake so the heat generated from the top can brown the cake.

Hi I made marble cake and almond cake with your receipe. It's good:) Plz tel me how to make it the upper part of the cake brown( as seen in the pic shown above )using stove top as my oven isn't working .

Where can you buy Almond slices in Sri Lanka?

Sorry I wouldn't know. You can simply slice the almonds at home.

can this cake be made in pressure cooker?? if i want to bake cake in pressure cooker,should i use the same recipe??

Yes you can, don't use the pressure valve/whistle.

salam..i am new to baking..and really want to try your almond cake for my husband...plz tell me that what is difference between self rising flour and simple flour (maida)??

sorry just read your answer plz tell me that if i use maida then what quantity of baking powder should i add in it??

what kind of flour is self-rising-flour?

It is flour that has baking powder in it. You can make it at home by adding 1 and a half tsp baking powder and a pinch of salt to every cup of plain flour.

Its always interesting to go through the comments under every recipe. Even more so to read ur curt replies to irrational queries :)

i had tried quiet a few of ya recipe and it all had turned out very well. first of all thanx for it. and now that i would like to know that to make this cake could you please let me know the measurement for 250g of self rising flour.
